Veggie options?!


Question:

Veggie options?

I just asked this a few minutes ago but I don't see it so I will ask again. Do any vegetarians out there have any delicious non-meat recipes? I want to try something other than pasta and salad. I have already tried tofu and veggie burgers so do you have any other ideas? (quick recipes if possible!)

Jamie is Stupid: Vegetarians abstain from eating flesh. Fish is flesh, so vegetarians do not eat it. If they do, they are no longer vegetarian.

There is a lot of confusion about this. Some people say "I'm vegetarian, but I still eat fish." This person is not a vegetarian. If a person eats the flesh of only fish and no other animal, then they are called pescatarian. If they eat the flesh of fish and chicken, then they are plain ol' meat eaters who abstain from red meat. I don't see why, but some still believe that vegetarians eat chicken.

Vegetarians abstain from eating all flesh, in all amounts, and from all animals.

To answer EffYew's question (EffYew, what a name, lol!):
You can try minestrone soup made with vegetable stock/broth, pasta e fagioli made with vegetable stock/broth, bean burritos, rice & beans with chile and tortillas and salad, red beans & rice with greens, Asian foods with no meat/eggs in them (I don't both saying "dairy" 'cause Asian foods rarely have dairy), pasta & chreese (see website below), "cream" of carrot soup (use soy milk instead of dairy), "cream" of any other vegetable soup, baked potato with vegan margarine or veggie cheez or salsa or veggie chili on top, crostini with tapenade and salad, peanut butter & jelly sandwich, tomato soup with a grilled veggie cheez sandwich...

There are so many options, for real.

Ooo ooo I just remembered something... get some corn tortillas, heat them up on the stove (or microwave, whatever), put some avocado slices in them, sprinke a little salt, mash it up a bit, roll, and ENJOY. Mmmm!!!

Oh yeah... make some toast, get some vegan mayonnaise, slice up some tomatoes, and make a tomato sandwich. I swear it's so good! Sprinkle with salt & pepper and enjoy. If you want, add a slice of vegan cheez. If you don't have the vegan cheez it's fine, tomato sandwiches are the bomb!

Ah yes, there's always cereal with soy milk. Sometimes, cereal for dinner is good.

Hate to say it but, meat. If you'd just be normal you wouldn't have this conundrum, don't you think? No offense.

I really like using the following olive oil (or vegetable oil), salt, pepper, basil, and either soy sauce, soy paste, or vinegar (depending on if you want a bitter or sweet taste). Use this to sautee sliced mushrooms. You can also add vegetables to this like broccoli or mixed vegetables. I also like this mixture to sautee tofu.

meatless burritos-made with refried bean paste, cheddar cheese, brown rice. serve it with sour cream dip.

rosted eggplant--cut a large eggplant in half lengthwise. sprinkle cut sides liberally with garlic powder and onion powder. put in a roaster lightly covered in olive oil. add some onions cut into large wedges and a few garlic cloves cut in half and a few whole stalks of celery. cook at 300 F for about 40 minutes. baste the upside (purple skin) of the eggplant halves with a basting brush and the olive oil several times during cooking. serve with butter or margarine and lightly salted and seasoned with celery salt and paparika.

mushroom caps- stuffed with breadcrumbs, butter or margarine, parmesan cheese, minced garlic, parsley flakes. broil until the top turns golden and slightly crusty.

Kraft Mac & Cheese, add: Red Kidney Beans and Salsa to taste.

hi i am in same boat getting fed up of pasta and quorn.i dont eat diary or egg too but dont class myself vegan as i still eat the occasional cake ie hidden egg/milk.
i have found a few good student veggie cookbooks around that have recipes in them.they are cheap too.

How about a nice veggie sandwich? I make mine with whole wheat bread, hummus on one slice and mashed avocado on the other, sprouts and onions in the middle, and thyme and black pepper to taste.

I like really strong flavors, though, so maybe my personal sandwich isn't a sandwich for everyone, but if you find your inner sandwich you will achieve enlightenment.

Well, if you're just vegetarian and not vegan, I know a really good recipe that's nice for lunch....
Ingredients:
1 Flat bread
1tbsp Olive Oil
A few leaves of basil
Fried tomatoes
Mozzarella Cheese (you can get the fake kind if you're vegan)
Procedure:
Warm the flat bread in a toaster-oven for 2-3 minutes. Then, taker it out on a plate and drizzle the olive oil over it, then add basil, tomatoes, and the mozzarella cheese! Easy and delicious!

This contains dairy:

1. Slice (1/8 inch) 4-6 baking potatoes (peeled or unpeeled)
2. Slice or chop one med purple onion (or onion of your choice)
3. Grate about 3 med carrots
4. Salt and pepper to taste
5. Milk ( I usually use vanilla soy milk)
6. A cheese of your choice ( I prefer a nice aged cheddar)

Layer bottom of casserole dish with potatoes, ,then onions, then carrots, then cheese. Repeat until casserole dish is almost full. Pour milk over contents of dish about 1/3 deep. Cover with foil. Bake at 350*f for about 2 hours, remove foil and bake about an hour more. Potatoes should be tender and most of the milk liquid should be cooked out of the dish.

This is very easy and very tasty. Its a version of a dish my mom used to make-I just leave out the pork chops!

really good=zucchini chili, believe it or not...keep the typical kidney beans and stuff but replace the beef (ugh) with small chunks of zucchini...make sure you still throw in hot sauce and salsa...sooo good on a winter day!

I also like sushi, get nori rolls, vinegar rice plus all sorts of things, mangoes, cucumbers, carrots and avocados to put in it. And the easiest veg meal in the world is rice or pasta with a can of goya beans.

Here is 2 great recipes...

Turkish vegetable casserole
2 Long eggplants or
1 md Oval eggplant Salt
4 sm Zucchini
3 sm Sweet green peppers
250 g Okra; optional
250 g Green beans
4 sm Tomatoes ripe peeled
1/2 c Olive oil
3 sm Onions; sliced
2 Garlic cloves; crushed
1/4 c Chopped parsley Freshly ground black pepper
1/2 c -Water
Pre-heat oven to 350 F
Cooking time: 1-1/2 to 2 hours
Remove stem from eggplant wash well then peel off 1/2 inch strips of skin lengthwise at intervals giving a striped effect.
Cut long eggplants in 1/2 inch slices; oval eggplant should be quartered lengthwise then cut into chunky pieces.
Spread eggplant on a tray and sprinkle liberally with salt.
Leave for 30 minutes then pat dry with paper towels.
Trim zucchini and cut into 1-1/2 inch pieces.
Remove stem and seeds from peppers and quarter.
Wash trim and de-fuzz okra. Soak in vinegar to remove slime. Drain.
String beans if necessary and slit in half
Slice tomatoes.
Heat half the oil in a frying pan and fry eggplant until lightly browned. Remove to a plate - do not drain.
Add remaining oil to a pan add sliced onions and fry gently until transparent. Stir in garlic cook 1 minute then remove pan from heat.
Place a layer of eggplant in the base of a casserole dish. Top with some of the zucchini peppers and beans. Spread some onion mixture on top and cover with tomato slices. Sprinkle with salt pepper and some of the parsley.
Repeat until all ingredients are used, reserving some tomato slices and parsley.
Place prepared okra on top if used and cover with last of tomato.
Sprinkle with parsley salt and pepper and add water and oil drained from eggplant.
Cover casserole and cook in a moderate oven for 1 to 1-1/2 hours until vegetables are tender.

Vegetable Stuffed Ravioli

8 Uncooked manicotti

FILLING:
1 Cup Julienne, cut zucchini
1 cup Cut up Broccoli
1/2LB sliced mushrooms
1/2cup Grated Parmesan Cheese
1/2cup Red or Green bell pepper
1/2tsp dried basil leaves

TOPPING:
1 1/2 cup s spaghetti sauce
3oz shredded mozzarella cheese

Cook manicotti to desired doneness. Drain, rinse with cold water and let drain.
Meanwhile, heat oven to 400. In medium bowl combine all filling ingredients and mix well. Fill each manicotti with mixture.
Place 1/2cup spaghetti sauce in ungreased 12X8" baking dish. Place filled manicotti over sauce. Pour remaining sauce over manicotti. Cover tightly with foil
Bake at 400 for 20-25 min or until bubbly. Uncover, sprinkle evenly with cheese. Bake an additional 5-8 min or until cheese is melted.
