What's the tastiest and easiest way to add more vegetables to a brown-bag lunch?

I'd like to add more vegetables to my diet, but I can't figure out a better way to do it when I take a lunch to work than just some carrot sticks. What's an easy, healthy and delicious way to get a good serving or two of vegetables at work?


Answers:
The easiest way I know of is to make a big batch of something over the weekend. You can make some vegetable-packed soup, Saag Pannier (an Indian dish consisting of spinach tomatoes, cheese and spices) and pack a serving worth in your lunch each day.

Steaming is another simple thing to do. If you have a microwave at work, you can microwave them with a little bit of water. or you can do it in the morning while you are brushing your teeth... melt some cheese on some steamed broccoli, and YUM.

If you are good about putting vegetables in you dinner, make extra dinner and pack the leftovers. If you don't have a microwave, you can buy thermoses that keep food warm for up to 6 hours in most stores.

a veggie pita samwich....

sliced cucumbers, tomatoes, avocado, sprouts (or not) in a pita pocket...Very good with a side of tomato soup (and I hate veggies, too!)

Some grated veggies with some healthy spice or sauce.

how about a drink? V8 fruit fusion. I give it my son (who hates vegetables) they have different flavors

Salad? Mmmm or put something on your sandwich like green peppers.

The easiest way to add more vegetables to a brown-bag lunch is to get a bigger brown bag and put more vegetables in it!

If you want quick AND easy, then just buy those pre-bagged vegetables they sell for stir-fry/stews. Lots of different chopped vegetables, and add a low cal dip. I also love V8 juice.

Did you try a tomato with a bit of salt & pepper? Sliced peppers are tasty as well. I love cucumbers - but they won't stay fresh for long.

Apples and oranges travel well. Also, put veggies like lettuce, and tomatos on a sandwich

when I was a kid, my mother used to put celery sticks with peanut butter on them in my lunch. carrot sticks are always a great option, try adding a small tupperware of ranch dressing to spice things up. a tupperware of salad greens with a packet of dressing is also easy.

You could bring a tossed salad, or raw broccolli or Cauliflower, celery, radishes cut up. V8 juices is also a good source and you can drink it.

I like to pack a bunch of raw veggies, like carrots like you mentioned, but broccoli, cauliflower, mushrooms, peppers. Salads are a great way to get your greens, and there are so many low fat/low calorie dressing on the market. Subway has an all veggie sub, that is yummy.

buy an already made salad at the store that you can take to-go. They are actually kinda cheap, if you buy the right ones. They have some with lettuce and everything in it, or the ones that you add lettuce to. Then just put lettuce in a little container and bring that with you. They usually have ham, turkey, cheese, and just about anything to make a plain salad good.

You could add vegetable or fruit juice (natural without preservatives, sugars, or added flavors) to your lunch. An easy way to add more vegetables is to sneak veggies into a sandwich. Carrot puree, tomato slices, lettuce, cucumber, green pepper, etc. If you want a way to liven up carrot sticks, add a little bit of hummus (whatever flavor you want) for dip.

I have a few suggestions for you! How about fresh celery sticks with diced tomato and a bit of mayo inside the stick. Also if you cook any veggies at night , like string beans , you can then put them into a container with some chopped onions and balsamic vinegar for a tasty cold treat!Peppers are so sweet and refreshing, why don't you purchase red, yellow, and green and slice them thin and add into your brown lunch. These are some of thngs that I did for brown bags and it worked out very well. They are also refreshing when your working very hard and can't always find time for a refreshing drink. you could make a salad and add plenty of veggies to it or you could just thow a few different types of raw veggiesi n the bag and a bowl of your favorite salad dressing as a dip and eat them like that.

ooh, go with the classic ants on a log...or there's the handy little veggies and dip things, though i think they need refrigeration...

Toss some raw veggies like cabbage, lettuce, diced carrots, radish, different bellpeppers(red, yellow, green) celery sticks, broccoli, beetroot. u can also have boiled potatoes if possible keep refrigerated untill lunch. And when ur ready to feast on them go ahead along with ur favourite dressing dip. njoy.

Sneak them into the sandwich! Stack spinach and cucumbers with a little salad dressing (with or without the turkey) or add finely chopped celery, carrots and broccoli to tuna salad. Better yet, substitute mashed garbanzo beans for the tuna! Another great way to change it up is with soup. Tomato, Broccoli or Minestrone are good options, though they are healthier if you make them yourself. Sometimes I'll add a handful of fresh broccoli flowerettes to canned broccoli soup if I'm short on time.

What about a salad with a sour dressing. I heard garlic sauce is delish. Try salad.

You can try raw zucchini, celery, cauliflower, broccoli and more with dip. You can also lightly cook veggies and toss in a vinaigrette that tastes good cold. You can also get a thermos and put vegetable soup in it.

make a smoothie they taste better then raw veg and theyr a great source of dairy too if u add some milk!
