They are a very mild legume that will take on the flavor of whatever they are cooked with. Essentially they taste like a mild bean.

They don't have a much flavor like most beans but they're good in recipes. A good lentil soup is somewhat like pea soup in texture but is generally flavored with either beef or tomato.

kind of sweet, not like sugar, but sweet. they have pectin in them ...like apples do..
