Need a special vegetarian lunchbox idea?
My daughter was awarded a top honor at school, and part of the reward is a field trip this friday, which includes a stop and McDonalds-(she would starve before she would eat there, lol) I typically pack veggie wraps, cous cous, or pasta dishes in her thermos for lunch, and she loves it. I would love to come up with something more unique for her special day. Any ideas would be much appreciated. She cannot have soy due to food allergies. Thanks in advance.........eggs and cheese are ok, tho not sure how an egg would hold up in a thermos.

How about Mini heart shaped vegetarian pizza with different topping of your choice. Or make her favorite sandwiches, but use a cookie cutter and cut the bread in a heart shaped. Plus heart shaped sugar cookies with pink glaze and a strawberry/banana smoothie. It takes more time but since it is a special day, it is worth the effort.

Core an apple. Mix peanut butter and raisins and stuff where the core was. (you could also use another type of nut butter and her favorite dried fruit or cheese and nuts)
Cucumber and cream cheese sandwich.
Zucchini-Raisin Muffins
Makes one dozen
Good accompaniments are a small container of yogurt or a wedge of cheese, plus some fresh fruit. If you won't be using the whole batch within a couple of days, pop some in the freezer for later use.
1 1/2 cups whole wheat pastry flour
1/4 cup wheat germ
1/2 cup natural granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
3/4 cup organic vanilla low-fat yogurt or soy yogurt
2 tablespoons light vegetable oil
1 cup firmly packed grated zucchini
1/2 cup raisins
1/4 cup chopped walnuts, optional
Preheat the oven to 350 degrees.
Combine the first 6 (dry) ingredients in a mixing bowl. Make a well in the center of the dry ingredients and pour in the yogurt and oil. Stir together until smoothly combined. Stir in the zucchini, raisins, and optional walnuts.
Divide the batter between 12 muffin tins and bake for 20 to 25 minutes, or until the tops are golden and a small knife inserted in the center of a muffin tests clean. Cool on a rack. Wrap well in plastic wrap to send in a lunch box.
(You could substitute honey or molasses for all or part of the sugar if you wish)
I would not do the egg unless u have a lunch bag to use, better yet forget the egg. use fruits, cookies, veggie snacks, pb&j sandwich or some kind of cheese and crackers
you could do like a fruit and yogurt.....or take some white rice and steamed vegitables and mix them together....u could even do pizza.....and what u should do is leave her a "congrats" note in her lunchbox! its always fun!!
Have you tried those vietnamese rice-paper rolls? they're always fun. You can even give her the option to roll them herself; though that can be messy. Or pre-roll them and wrap them in a moist paper towel and cling-film. Add a small jar for an exotic dipping sauce (I use medical specimen jars because they're air tight, a good size for dipping, plus you can buy them sterile from the chemist, probably wouldn't send my daughter to school with one though...)
Give her something exotic and strange like a wrapped sticky rice parcel in bamboo leaves (you can buy them at any decent asian grocer). Or a shredded-dofu empanadilla with cheese and snow pea sprouts.
Some corn chips and home made salsa on the side?
Fresh salad with roast pumpkin and sunflower seeds?
Roast veges and apple/pear puree is always nice and special. Serve her a handful of almonds or brazil nuts to nibble on too. Give her a 'pocket pack'!
I always try a new vegetable or new fruit that they've never tried before, that makes it seem special and the other kids can be impressed (or think your child is weird, depending on what you feed, and what kind of friends she has...)
Make a mango dip for her zucchini sticks, or a mint jelly for her cucumber. Give her a dessert, like chocolate coated ginger or strawberries. Hide that "something special" in a lettuce leaf, so she has to unwrap it before she eats it.
Just to top it off, hide a little note in there telling how proud you are of her.

its made of a fungus. Its great how you pack her nice vegetarian things. If you want something fun, some veggie sushi like with avocados are good. I also like bean dip.
