Any form of cooking will make food loose its vitamins and minerals However steaming is the BEST choice when it comes to cooking veggies. Studies have shown that Microwaving leaches out the MOST vitamins and minerals from food and that steaming lets the most remain. You want to cookt hem basically so they are "al dente" as noodle people say. Soft but not mushy, and still with their bright color. Also if you rinse them in cold water after cooking it will help preserve vitamins/minerals.
no as long its fully color, if its light colors its mean the vegetables lose thier minerals
Nowadays, it's most important what you're NOT eating. Even if those veggies lost all their vitamins and minerals, it's still better than eating a bunch of junk like meat, oils, flour, sugar etc.
