Any vegetarian ideas for sandwhiches from trader joes?!?
Hello
I'm a vegetarian (once again) and I need some simple sandwhich ideas to pack my lunch for school.
I like things that are EASY to make, meaning i just like to throw ready made ingredients onto the bread and call it a meal.
I hate cucumbers, tofurkey and eggplants, which seems to be popular with vegetarians.
Any ideas on a few indegrients to make a good and easy sandwhich? People told me to add avacados to my sandwhich but what else would I put in?
also please suggest items from trader joes- i love that store!

I love roasted red pepper sandwiches! I use sprouted grain bread, spread it with either tahini or hummus, quartered roasted red peppers, load it with arugula, and add some cheese if you like. One of my fav's! And all of it can be bought at Joe's
Something else I like, kinda works better in a wrap... sliced tomato, avacado, sring mix lettuce or mico greens, a tad of garlic hummus, and some cilantro. YUM! Joe's has all that stuff as well!
Tortilla (I prefer corn but it doesn't matter), pinto beans (canned) mashed with enchilada sauce, roasted peppers, onions and tomato, layer roasted ingredients on top of beans, top with cheese if you want, and roll it up. You can serve with avacado or avacado mixed with salsa. Once again, all of this is from Joe's!
Hope this helps! And hopefully it's just not me that thinks these are tasty LOL
I'm at TJs several times a week. I looove that place too! Here are several ideas, but ask them; they usually have an info person near the front door.
Cheese, they have tofu and soy cheeses if you prefer. Eggless egg salad. Put some of their California rolls made with vegi-crab into a sandwich and watch your friends drooool! Put babaganoosh as a spread in a sandwich. Chop one of their delicious salads finely and spoon into a sandwich. Buy French type rolls, scoop out the insides and fill with some of the above.
Buy some of their savory crackers and take a baggie full to scoop into a mixture of some of the above.
Get the idea? Mix and match and try new things! Have fun!

Did you try searching for solved answers for vegetarian sandwiches? I believe there have been some good answers there. You could also check your school library for vegetarian cookbooks.
Here is a good one to pack and you make it ahead --
Nutty Marmalade Sandwiches
1/2 cup peanut butter
1/4 cup orange marmalade
1/4 cup shredded sharp Cheddar cheese
1 teaspoon lemon juice
6 slices bread
In a small bowl, combine peanut butter, marmalade, cheese and lemon juice; mix well. Spread over three slices of bread; top with remaining bread. Freeze for up to 4 months. Remove from the freezer at least 4 hours before serving
And if you want one you can serve warm --
Sourdough Veggie Sandwiches
2 tablespoons mayonnaise
4 slices sourdough bread
1 cup shredded Cheddar cheese
2 small zucchini, halved lengthwise
1 large tomato, thinly sliced
1/4 cup shredded carrot
1 tablespoon salted sunflower kernels
2 tablespoons butter or margarine, softened
DIRECTIONS
Spread mayonnaise on one side of each slice of bread. On two slices, layer the cheese, zucchini, tomato, carrot and sunflower kernels. Top with remaining bread, mayonnaise side down. Spread butter over the outside of bread. In a large skillet, cook over medium heat until bread is lightly toasted and cheese is melted.
Happy eating!
My favorite Vegetarian sandwich:
2 slices toasted Ezekiel Bread
2 thin slices mozzarella cheese
Leaf lettuce
thinly sliced tomatoes
sprouts (your fave kind)
avocado slices
Dijon mustard
2 T chopped green chile
Toast bread & melt cheese. Assemble the other ingredients and enjoy with a dill pickle spear.
