Go to websites offering chinese vegetarian recipes. The chinese use alot of dried gluten for their vegetarian dishes.
We just chuck it into whatever we're having for dinner. Just soak it and wring it out (if it's the spongy kind) and chuck it in. Easy. Usually best in stirfry. I see no need to get any more complicated than that.
