The two books that I most highly recommend are "The Vegetable Passion" by J.Barkas and "The new Farm Vegetarian Cookbook".

The first is *not* a cookbook. It's the first book I ever saw about the who, what, why, when and where of veggiedom! It's long out of print but readily available through used book websites like Abebooks.com and your local library can get it if they don't have it in stock and you''d prefer not to buy it.

The second is a *MUST* for every serious vegetarian or vegan cook! It's not strictly a cookbook but has good background information also. The only thing that really keeps it from being a vegan cookbook is they call for honey but most vegans already know that Agave Nectar is a perfect replacement product. It's available from Abe and can also be found at Amazon

What I did when we first started was to go to the library and check out a bunch of books so I could learn all I could to make sure we have proper nutrition and to find good recipes.

I've found few cookbooks that have TONS of recipes I like other than the two I mentioned, but by going to the library, I could dig out two or three from each book and just put them on recipe cards to try.

You can also take the meat out of your favorite recipes and replace it with tofu, cheese, tofu, tempeh, or beans. They also have crumbles and "sausage" made from tofu that you can buy at health food stores and use as you would ground beef or meat sausage.

You might also speak with your doctor to make sure you're getting the proper nutrients.

I know it is going to sound dumb at first, but these books are really good for learning the basics...

I wouldnt think you need to spend money on a book-there are plenty of sources online. Try meetyourmeat.com if you want inspiration. It is quite unsettling though, I must warn you. It was more than enough motivation for me and my young daughter to go veggie. Read lots of information about how animals for food are treated, and how disgusting meat really is (sanitary wise) and that should do it. When I heard about the fact that ALL commercial meat and poultry have fecal matter in them that is "sanitized" with cleaning agents (bleach, etc) injected in the meat, that was more than enough for me. I havent had meat or meat products in over two years, and do not intend to again.

I became a vegetarian when I was a young teenager and I loved this book:

If you're older, go for Vegan and Vegetarian FAQ, published by the Vegetarian Resource Group. You can just go to www.vrg.org to find it. It's both inspiring and helpful.

Becoming Vegetarian by Vesanto Melina. I think it has a website, or look for a link on AllVeggieLinks.com. Easy to read, very helpful. You feel less like the author is a dietitian (which she is) than she is a vegetarian mentor.
