It's my mom's Screwball Cake--the recipe came from an old cookbook from the WWI/Depression/WWII era, when there were shortages and rations.
Basically, you mix up the dry ingredients (flour, sugar, salt, cocoa, and baking soda) in a pan. You make three holes--one hole gets vanilla poured in it, one gets oil, and one gets vinegar.
Pour water over the whole thing and stir. It turns into an incredibly moist, slightly tangy deep dark chocolate cake. Sometimes it's called a "wacky cake." Hers has a coffee frosting that I don't like much--you could substitute milk products because it has a little milk in it. It has powdered sugar, strong coffee, milk, and a little margarine to make the frosting. I mean, it's OK, but I'm not much of a frosting fan.
Try to track it down--I'd have to look through her cookbooks to find it. But it's great!
Fresh fruit, and if you can, look up a recipe for eggless cake and consider ice cream or sherbert made of soy product.

and take the pulp and put it in a bag and in a freezer then later eat whenever you want

peach cobbler. It has the perfect amount of sweet and with a lemon on the side it looks great and has a perfect bite.
vegan chocolate mousse with fresh strawberries. its absolutely sinful. Usually I opt for a peach or apple crisp, unless of course someone is making rhubarb pie. Oy, this question is giving me a sweet tooth!
Chocolate cream pie. I make mine with a flour/tofu crust, chocolate tofu filling and a whipped tofu topping. No one has ever realized they're enjoying tofu (unless they know that I made the pie)!
It's also fun watching the faces of the non-veggie when they find out they just got more protein from a slice of pie than they got from that piece of dead flesh they ate
Sorry, my recipe is strictly top secret but it's based on the pie recipe found in "The new Farm Vegetarian Cookbook". That book has a LOT of fantastic vegan desserts (If you replace any honey called for with Agave Nectar) and is well worth owning!

Ingredients
porridge oats
vegan whipped cream
raspberries
agave nectar or maple syrup
Add an equal amount of oats to agave nectar and mix. Spread on greaseproof paper and bake in a 200 degree oven for 10 minutes or until golden brown. Leave to cool. Use 50g oats and toast in a non stick pan until it browns and leave to cool.
Take 1 tablespoon of toasted oats and mix with 3 tablespoons of cream and 6 raspberries. Mix thoroughly squashing the raspberries into the mixture. Decorate with pieces of the oaty biscuit, raspberries and agave nectar
