integrate vegetables into other food like:
broccoli w/ mac and cheese
rice w/ tomato sauce, carrots, squash, and peppers
or if you want them to eat raw, you can make dip or lettuce wraps.
give fruit or starve them
Give them stuff that they like.
Pass him a pork chop!
Nothing really, there are other options for vegetarians than salad.
Take them out for Chinese or Mexican!

Offer another meatless dish. Salads can get boring if that's all you think vegetarians eat. They eat enough of their share of salads on most days.
There are so many cooked dishes that doesn't require or have to have meat and meat based products in them.
Or why not ask them what they would like instead?
I am not particularly fond of salad and have been vegetarian nearly 1/2 my life. I eat them, but...
I assume the concern is over their getting enough nutrients. The rule I follow is to eat a wide variety of veggies, grains and fruits. I don't count up proteins or make sure to always have X on Monday. Variety is the spice of life. And, yes, variety exists in the land of Vegetaria.
Try alternative style salads, such as Cous Cous. Otherwise look up fried eggplant etc etc
That's not a vegetarian. That's just a pickey eater.

I'm assuming you have them coming for dinner or maybe a member of your family who has recently chosen to become a vegetarian. There are so many options, salads are actually one of the least healthy options out there, particularly since they are often made with iceberg lettuce which has no nutrients. One of my favorites is a stir-fry over rice. There are so many vegetables out there and for protein you can use beans (I like black beans) or tofu (extra-firm is the best). It is also pretty simple to make. Another great choice is Zuchinni Parmesean. More commonly it is made with eggplant, but I find Zuchinni tastes a little better. It's healthier if you don't bread/fry them.

let them be. Why do you NEED salad? I personally love it, but my vegetarian daughter does not. I make sure she gets an adequate supply of other veggies, cooked or raw, and loads of fresh live juices from carrots, apples, celery, swiss chard, etc. She loves juice made fresh with a juice extractor. Give them other whole grains, rice, millet, quinoa, etc. People tend to think veggies just munch on bunny food and salad all day. It couldnt be farther from the truth. We eat more interesting and diverse foods now than when we ate meat. Dont miss is a bit.

I've been vegetarian for 3 years, and unless it is a spinach salad... I won't even consider eating it....
I mean, I won't even eat lettuce (esp. that iceberg crap, they try to pass off in most salads) on my veggie burgers.

Well, the average vegetarian will eat most anything without meat. How about a hummus and falafel pita? Everybody loves hummus and falafel.
And I think answerer above me should reword their answer to say "except", not "but".
you could get them drunk and then feed them salad...just kidding...
There are many meat look-alikes. For example, something that tastes and looks like chicken nuggets but contains no animal ingredients. These can be delicious. Some people might not notice the difference if they are not told. These are not expensive and can be bought at an average grocery store.

I spent about a year as a vegetarian who didn't eat salad. Then, I went to a restaurant called Organic (in Barcelona, Spain) and had the most amazing salad that totally changed the way I ate! If your vegetarian won't eat salad, serve lots of boiled, steamed, roasted and grilled vegetables instead! Also, serve lots of vegetable soups and stews. See if they'll drink a vegetable-based juice as well. Add a multi-vitamin or a greens supplement to their diet. Trust me, there are tons of ways to eat veggies besides just in salads!
Vegetarians eat alot more then salad and you dont need salad to be healthy.
