How open are you to trying some non american cuisines?

Middle Eastern and Indian Cooking has some delicious vegetarian dishes. Too many to mention.

What you will find useful will all depend on whether your a lacto vegetarian, or a vegan.

I would recommend a google search. There are support groups that can assist you better than I.

Hope this helps,

my daughter does not eat meat and one of her fave dishes i make her is this in a frying pan cover bottom with oil take a head of broccoli cut up sliced fresh mush rooms chop onion and garlic i use minced garlic out of bottle first brown garlic add all of the above and let fry up it smells so good cooking mean time make any kind of pasta you like when all is cooked the way you like your veggies pour over pasta oil and all sprinkle with any kind of cheese and pass the olive oill forgot fry in olive oil it is tasty and good for you

Im not vegetarian. I only eat halal, kosher or organic meat and do not eat dairy products unless I know the milk/eggs were obtained from healthy animals. I'm trying to cut out all meat that has eyes (not mussels, clams etc.) I may become a veggie/vegan some day but in due time. Tofu stir-fries, lasagnas and tahinis are good. I also recommend you eat peanut butters and broccoli (P.b=protein and broccoli=calcium). Pizza, pasta, knish, Jewish food etc. can be quite tasty. Good luck.
