Rice Cooker Spanish Rice and Beans.

1 c brown rice +water according to instructions on package. Use stock instead of water if you have it. (Use white rice if you prefer.)

1 can red beans (I prefer Goya)+ additional 1/2 c water (or stock)

I/4 can tomato sauce or substitute fresh tomato

Optional: 1 tsp butter or virgin olive oil. Salt and pepper to taste. (I usually add a little black pepper and tiniest bit of olive oil.)

Gently stir together and turn the rice cooker on.

That's it. Fluff gently with wooden fork before serving.

I sometimes add chopped veggies fresh or or canned. Corn works really well.

You can also add chopped onions, garlic, cilantro, green pepper, olives, oregano.

I sometimes add chopped tofu (marinated increases flavor) or cubed flavored tempeh.

When serving you can also top with a nice grated cheese.

I used to put a can of soup in with the rice. So you can get some soup you like and add the recommended water and the rice and let it run.

I don't know of a website that specializes in it; but if you go to AbeBooks.com and search for vegetarian crockpot you'll find a few cookbooks on the subject! At one time I had three different books (one was vegan!). Most any veggie-friendly soup or stew recipe works well in crockpots and rice cookers! If you use soyfoods, find a meat based barley stew recipe and convert it to cruelty-free. I do that with Fannie Farmers' barley beef recipe using my own soysage but I've also done it with the MS Farms and Lightlife products and it's tasty and truly hearty!

I'd warn you that while rice cookers do a great job of cooking barley; you have to keep a wary eye since barley tends to 'foam over' in them. I've got an Aroma cooker and find that leaving the steaming tray on top keeps the foam from spilling over the sides. In a slow cooker barley doesn't 'mis-behave'.

Crock-Pot Lentil Soup

2 cups dried lentils
8 cups water
4 cups vegetable broth
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped carrot
3 Tbsp. snipped parsley
1 garlic clove, crushed
2 1/2 tsp. salt
1/4 tsp. ground black pepper
1/2 tsp. dried leaf oregano
14.5-oz. can chopped tomatoes
2 Tbsp. wine vinegar

? Rinse the lentils and place in a crock pot. Add the remaining ingredients, except the tomatoes and vinegar. Cook on low for 8 to 10 hours.
? Add the tomatoes and vinegar. Cook on high for 15 minutes, until hot.

Makes 8 servings
