What is mono and diglycerides?!

Question:

What is mono and diglycerides?

Answers:
Monoglyceride, diglyceride, and triglycerides are nothing but a combination of fatty acid and glycerol in different proportions. For example triglyceride has three fatty acids attached to a glycerol. Citric acid can be used till 2 years after the manufacturing date. If you find difficult in curdling the milk with citric acid try using the juice of lime.

Question: What is mono and diglycerides? It is in almost all the ready-made foods and also in bread and most milk products. How to find out if it is from plant or animal? My other question is many times I tried curdling the milk for paneer) with citric acid and it does not work. Does citric acid have an expiry date? It usually does not mention on packet.
