TOFU-
Because you can do anything with it.
You can use the extra-firm style and make great Chinese dishes. It soaks up the flavor of the sauce really well.
You can use it as a cheese substitute when making dishes such as Saag Pannier or "cheese"-stuffed pasta shells or lasagna.
You can get the silken kind and make desserts like cheese cake (yuuuuuuuuuum) or protein-fruit smoothies.
You can also use the silken kind to make white and alfredo-style sauces.
Tofu is amazing.

I like pasta because it is very versatile, you can make many vegetarian dishes from it.
veggie corn dogs from MorningStar its in a green box those thing are SO good, also buffalo wings & chicken nuggets from them r good too..... and remember its a personal thing,,, expiriment till you find something you really like

Beans. Because there are a lot of different types of beans, you can prepare them hundreds of ways and they stick to your ribs better than other vegetables !!!!! I know I know !!!!!!!!!!!!! Use beano first !!!!!!!!!!!!! LOL

Lots of risottos can be made veggie, filling and healthy, easy to cook and only one pan to wash up! Result............

I like rice because it goes with loads of things.

er because it removes the temeption to eat cooked and processed food, thus making eating decision easier, plus it cost nothing, is you have fruit trees around your house
Probably eggs-full of protein and nutrients, tast good, fill you up, and you can make some gret dishes with it. eg chive omelette stir fry,
Also things like nuts and seeds are good. I like all food except meat!!!! Cakes, etc!!!
I really love vegetarians - but I don't think I could eat a whole one
id say tofu, and pulses, such as aduki beans and lentils, which are high in protein.also a grain called quinoa, a bit like couscous, which is full of vitamins and minerals and lots of protein.
quinoa cause its high in protein and versatile.
oh and legumes.
Rice and coucous, it is so versatile you can eat it with yougurt fruit nuts for breakfast, eat it with veggies for lunch and dinner with a nice garden salad. Spinkle it with pine nuts or walnuts or almonds for a snack it is delicious , I love couscous the best.
Vegetarian omelettes and lasagne primavera. Also stir frys with or without tofu.
