What can I bring for lunch at work that is vegetarian?!

What can I bring for lunch at work that is vegetarian?

I need some quick and easy ideas on simple meals I can take to work that don't require refridgeration or a microwave that fit into my vegetarian lifestyle.

Ooh, absolutely anything really! I love tortilla wraps-you can buy them at any supermarket, ans eat them hot or cold.
here are some of my favourite fillings in them.
Cheese, salad, peppers, colesaw.
Mayo and cucumber.
You can also bring salads (add pineapple or apple to give it a sweeter flavour.)
Pasta salads (tomato sauce, or mayo and salad.)
You can bring any rolls or sandwiches with spreads such as marmite, cheese, philadelphia, salad, etc. I am 14 and i take in a vegatarian meal everyday. There are hundreds of things you can take in, just replace the meat with quorn or salad or cheese.

You could bring a bag of carrots with you to work.-the great one has spoken

I usually take PB&J or grab a salad on the way to work.

If you don't mind raw potatoes; cut them thin (with peal on' its the most nutritious part). Place them in a zip lock bag with Cinnamon and a hand full of Planters salted peanuts. Sounds strange; but you'll be the envy of the break room. ps Keep refrigerated.

Black Bean Burger

Take a can (or two - depending upon how many you want to make) of black beans and drain thoroughly. Sometimes I rinse them as well. Mash the beans and mix with 1 egg, 1/2 tsp Cumin, 1/4 tsp Chili Powder & Garlic Powder. Form the mixture into patties and cook in a fry pan with a drizzle of olive oil or grill the patties. Serve in a flour tortilla with salsa, lettuce, tomato, red & green peppers, cheese & sour cream. Once the patties are cooked, they don't need refrigeration thought I wouldn't recommend leaving them in a hot car or a place where it is really warm.

Try some fresh fruit and nuts. Perhaps some small cans of baked beans.

1.Vegetarian TVP and Tofu Loaf

INGREDIENTS:
1 10 ounce package frozen spinach, thawed
2 tbsp vegetable oil
1 onion, finely chopped
1 vegetable bouillon cube
1 3/4 cups boiling water
2 cups TVP
1 pound soft (silken) tofu
1 cup gluten flour OR 3/4 cup whole wheat flour
1 tbsp nutritional yeast flakes
1 1/2 tsp salt
1 tsp garlic powder
1 tsp poultry seasoning
1/2 tsp onion powder
3 tbsp vegetable oil
PREPARATION:
Steam the spinach and drain well.
Heat the 2 tbsp vegetable oil in a medium frying pan over medium heat. Cook the onion, stirring occasionally, until transparent, about 5 minutes.
Dissolve the bouillon powder in the boiling water.


Add the TVP and let stand for about 10 minutes.
Pre-heat the oven to 350 degrees.

Pat the tofu dry, then mash. In a large bowl, combine the TVP, spinach and tofu. Stir in the remaining ingredients and pour the mixture into a lightly greased 8 1/2 x 4 1/2 inch loaf pan. Smooth the top and bake for 45 minutes, or until brown on top.

If the loaf begins to get too brown on top, cover with aluminum foil. Serve with gravy



2.Vegetarian Tofu Spinach Lasagna Recipe


INGREDIENTS:
1/2 pound lasagna noodles
2 10-ounce packages frozen chopped spinach, thawed
1 pound soft tofu
1 pound firm tofu
1 tbsp sugar
1/4 cup soymilk
1/2 tsp garlic powder
2 tbsp lemon juice
3 tbsp minced fresh basil
2 tsp salt
1 32-ounce jar of tomato sauce
PREPARATION:
Prepare the lasagna noodles according to package directions. Drain carefully and set aside on a towel.
Pre-heat oven to 350 degrees.

Squeeze the spinach as dry as possible and set aside. Place the tofu, sugar, soymilk, garlic powder, lemon juice, basil and salt in a food processor or blender and blend until smooth.

Cover the bottom of a 9x13 inch baking pan with a thin layer of tomato sauce, then a layer of noodles. Follow that with a layer of half the tofu and half the spinach. Continue in the same order, using half the remaining tomato sauce and noodles and the rest of the tofu mixture and spinach. End with the remaining noodles covered by the remaining tomato sauce.

Bake for 25 to 30 minutes, or until tomato sauce bubbles.


3.Potato Veggie Burgers


INGREDIENTS:
1 cup canned black beans
1 carrot, grated
1/2 onion, diced
3 potatoes, grated
4 scallions, chopped
1 cup corn
salt and pepper to taste
oil for frying
PREPARATION:
Mash the beans with a fork or a potato masher. Add the remaining ingredients, except the oil and mix until well combined.
Shape the mixture into patties. Heat about two tablespoons of olive oil and cook each patty until the veggie burgers are done, about 3 minutes on each side.

4.Vegetable Veggie Burgers


INGREDIENTS:
3 tbsp olive oil
1/2 cup corn kernels
7 mushrooms, diced
3 scallions (green onions) diced
1/2 red bell pepper, diced
2 cloves garlic, minced
1 tsp cumin
1 carrot, grated
1 small potato, grated
1/4 cup silken (soft) tofu
salt and pepper to taste
1/2 cup bread crumbs
PREPARATION:
In a blender or food processor, process tofu until creamy and set aside.
Sautee the corn, mushrooms, scallions and bell pepper in one tablespoon of oil for 3 to 5 minutes. Add the garlic and cumin and cook for one more minute.

Remove from heat and add the carrot, potato, tofu, salt and pepper. Add bread crumbs until the mixture holds together. You may need a little bit more or less than a half a cup.
Shape the mixture into patties and refrigerate for at least one hour.

Heat remaining two tablespoons of olive oil and cook each patty until the veggie burgers are done, about 3 minutes on each side.

I am a vegetarian and I never had any protein in my diet - but lately , I started buying simulated bologne or meatballs - its made out of soy and such and no meat what so ever - theyre low in fat sugar and calories and carbs ; also I buy low fat cheese and some healthy bread; just put those together grill it .. and side of veggies !

take 4 bananas
or 3 oranges
or whatever kind of fruit you like that don't need refregerators

i bring only fruit to work and i eat it as a meal, it works i'm for real, if you don't get full, you can pack a trail mix of nuts and dried fruits

How about hummus with pita bread? Most grocery stores sell yummy hummus made in their deli. Fantastic brand sells a box of hummus that you mix with oil and water and it's decent.

You could make a salad with lettuce, beans (my fave is kidney, then black), tomato, green pepper, whatever suits you! If you want, eat the salad in a whole wheat tortilla. Yummy!

When I didn't have much time to sit down to enjoy my lunches at work I started bringing with me some nuts with dried fruit and a bottle of water with some freshly squeezed lime juice that I had added the night before into the bottle of water.

Each week I make a couple of batches of non-fat yogurt (usually coffee-flavored) and then have some for lunch each day. Sometimes I spoon the yogurt into a bowl and add some chopped fresh fruit (like bananas, pears, strawberries, mango, raspberries, or anything else I have on hand), nuts, raisins, etc., and maybe a little coconut. Delicious!

I pack a hot thermos lunch for my veggie daughters lunchbox everyday. She says it is still piping hot at lunchtime. I prepare the food the night before, and just reheat it in the morning (I put hot water in the thermos to preheat it while I heat up the food) I pack cous cous, stir fry rice, mashed potato and gravy, mac and cheese, quinoa pilaf, rice pilaf, veggie soup, mushroom soup, rice pasta with sauce, cheese tortellini or ravioli with sauce (alfredo or spagetti) spagetti, veggy curry, grilled veggies, etc. For warm weather, she likes veggie wraps, tabouleh, rice salad, salad with dressing, pasta salad, etc. Hope this helps give you some ideas

I also pack lunches without refridgeration or a microwave. My Favorite lunch picks are; Seasoned chickpeas, cold pesto pasta, pasta salads, potato salads, baked tofu, edamame(boiled soy beans.) salads, sandwiches, cold pizza. I serve these with nuts, crackers with spreads, pita bread, fresh fruit or vegetables with dips. I also pack little treats like dark chocolate, cookies, sweet breads or cakes, soy yogurt, or soypuddings. You may want to get a thermos. My thermos keep things hot for hours. I pack soup, chili, hot pasta, and sometimes cocoa.
