A few things my family likes:
*Taco Salad - use Smart Ground
*Cheese and Spinach enchiladas

*Broccoli Mornay- it's rice, cream of mushroom soup, chopped broccoli and top it off with swiss cheese

*Salmon with butter and Dill
Fresh Salmon, add melted butter (about a Table Spoon) and shake dill on top. Bake at 350 for about 15- 20 minutes.
*Portabella and Goat Cheese Pizza
Use a Boboli or other pizza crust add small amount of sauce, slices mushrooms (you might want to grill them first for about 5 minutes, just to soften them) and crumble goat cheese on top. Bake at 350 for about 8 minutes.
*Tomato Basil Pizza
Premade pizza crust- olive oil the crust lightly, add thin sliced tomatoes, cut up basil and crumble with Feta cheese. Bake at 350 for about 8 minutes. Watch it so basil does not burn!!
*Shrimp Tacos
Just like regular tacos but with shrimp, of course!
*Shrimp Scampi
I use frozen pre cooked shrimp and heat them with garlic and butter till see through. Cook Speghetti or whatever pasta you prefer. Pour Scrimp and garlic sauce on noodles. Top with Parm cheese.
*Spinach and Artichoke lasagna
This recipe calls for red pasta sauce. I use Alfredo Sauce instead because the veggie flavors really come out.

i dont know if you like indian food. alot of it is spicy and veg, like lentil soup "daal". pr roasted mushed up eggplant with spices "bharta"

Vegan Pigs in A BlanketServes 4

1 Roll of Croissant dough (Cub Foods brand Crescent Rolls are vegan)
2 Veggie Hot Dogs
Cut the hot dogs in half and then once horizontally. Then follow the directions on the package of the croissants. When you are going to roll the croissants, roll a piece of hot dog in it. (soy cheese if you want to)

This is one of my FAVS:
Black Bean Soup
Serves 2

1 onion, chopped
2 cloves garlic, minced
2 15-ounce cans of black beans, rinsed
1 ? to 2 cups water
? teaspoon chili powder
? teaspoon paprika
? teaspoon cayenne (optional)
? teaspoon cumin
Saute the onions and minced garlic in a 1/4 cup of water in a nonstick saucepan. Once the onions have become translucent, place the onions and garlic in a large stockpot. Add the rinsed beans, water, and spices. Simmer over medium heat, stirring occasionally. Taste-test the soup after 20 minutes and remove from heat once the beans are cooked to your liking.

For a slightly different taste, add frozen or fresh vegetables such as chopped carrots, kale, or broccoli.

INGREDIENTS
1 spaghetti squash, halved lengthwise and seeded
2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced
1 1/2 cups chopped tomatoes
3/4 cup crumbled feta cheese
3 tablespoons sliced black olives
2 tablespoons chopped fresh basil
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled.
Meanwhile, heat oil in a skillet over medium heat. Saute onion in oil until tender. Add garlic, and saute for 2 to 3 minutes. Stir in the tomatoes, and cook only until tomatoes are warm.
Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl. Toss with the sauteed vegetables, feta cheese, olives, and basil. Serve warm.
THESE ARE JUST A FEW OF MY FAVORITE DISHES. HOPE IT HELPS!

Chinese Noodle Dish
1 lg onion & 1 Cup celery, chopped; 1/2 c chopped mushrooms sauted in 1/2 stick of margarine. Add 1 can mushroom soup, 1 soup can size water, 1/2 lb cashews; and 1 sm can chow mein noodles. Add 1 Cup stredded cheese. Mix well. Place in oiled baking dish. Bake for 1 hour at 325.

Gazpacho is a great one to try--it's a slightly thick, tomato-based soup with lots of chopped veggies (usually onions, bell pepper, cucumber, etc) and it's served cold. I know that sounds odd, but it's very tasty and great on hot days. You could find a recipe for it on any recipe site, I'm sure.

It is all about their seasoning. If you are eating seafood then you probably aren't a true vegetarian, especially with the shell fish. An occasional small piece of white fish probably won't bother your vegetarian outlook, but it is still meat.
