Veggie fajitas: Saute red onion and bell peppers in garlic infused olive oil. Salt and pepper to taste. Add tofu if you like. Mix in 1/2c salsa. Fill whole wheat tortillas with the veggie mixture. Lunch solved.
Bean burritos from Taco Bell are vegan. So is the seven layer burrito if you order it without sour cream.
You can make a sandwich spread with Tu-no (you can get it at whole foods stores in the vegan section), grapes, olives and Italian dressing. This is good on toasted bread or pita bread with tomato.
I also like taquitos filled with potatoes and bell pepper. Cut potatoes and bell pepper into strips. Roll in a corn tortilla and fry. Dip in guacamole or salsa.

Vegetarian "Chicken" Salad Recipe
INGREDIENTS:
1 carrot
1 celery stalk
1 green onion, finely sliced
1 tbsp relish
1/4 tsp dill
1/4 cup mayonnaise (use vegan mayonnaise for a vegan version)
approx 6 oz mock chicken or 10-12 mock chicken deli slices
PREPARATION:
Using a food processor or a grater, finely dice the carrot and celery.
Slice mock chicken into aproximately 1 cm square pieces.
Combine all ingredients in a large bowl until well mixed.
Serve over lettuce or on bread for a vegetarian "chicken" salad sandwich.
Vegan Greek Salad Recipe
INGREDIENTS:
1/4 cup olive oil
2 tbsp wine vinegar
1/2 tsp salt
1 tsp basil
1/2 tsp black pepper
1/2 tsp oregano
1 container of tofu, cut into 1 inch cubes
3 tomatoes, sliced
3 cucumbers, sliced
1/2 red onion, diced
1/2 cup fresh black olives
PREPARATION:
Whisk together the olive oil, wine vinegar, salt, basil, black pepper, and oregano. Pour this mixture over the tofu and marinate for at least an hour.

i'm not vegan, but i love salads. some romaine, tomatoes, bell peppers, cucumbers, garbanzo and kidney beans (important if you don't eat meat, they provide protein). i like mine with eggs, and beets, and lots of ranch dressing, but the idea is the same. spinach dip with bread and bell peppers, peanut butter and apple sandwiches. yummy
