Does anyone have a recipe for vegetarian cupcakes? Frosting recipe included?
I would really appreciate it! It doesn't have to be vegan, but if it was, that would be great!

Vegan Chocolate Cupcakes
2 1/2 cups flour
2/3 cup baking cocoa
2 cups sugar
1/2 teaspoon salt
6 tablespoons apple sauce
2 1/4 cups water
1 teaspoon vanilla
2 tablespoons rice or white vinegar
2 teaspoons baking soda
In large bowl, whisk together dry ingredients. In separate bowl combine liquid ingredients. Stir liquid into dry ingredients until blended. Fill nonstick sprayed muffin pans.
Bake in preheated 375oF oven for 25 minutes. Remove from pan and place on a rack to cool.
Makes 18 cupcakes.
Simple icing: Equal parts soybean margarine, vegetable shortening and confectioners sugar (For this recipe 1/2 cup of each should suffice). Grated orange zest to taste. Cream everything well with a soft spatula.
This is a good recipe, my family love them and we are not vegan.

Here's my cake recipe...I'll give you adjustments for time/temp. at the end:
Old-Fashioned Chocolate Cake With Cocoa Frosting
Yield: 8-10 servings
CAKE
3 cups all purpose flour
2 cups sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups cold water
1 cup corn oil
1 tablespoon vanilla extract
1 1/2 cups semisweet chocolate chips
FROSTING
1/2 cup plus 2 tablespoons (1 1/4 sticks) unsalted butter, room temperature
5 cups powdered sugar
8 tablespoons (about) whole milk
1 1/4 teaspoons vanilla extract
3/4 cup plus 3 tablespoons unsweetened cocoa powder
FOR CAKE: Preheat oven to 350°F. Butter and flour three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Sift first 5 ingredients into medium bowl. Mix water, oil and vanilla in large bowl. Whisk in dry ingredients. Divide batter among pans. Sprinkle 1/2 cup chocolate chips over batter in each pan. Bake cakes until tester inserted into center comes out clean, about 25 minutes. Cool cakes in pans on racks 15 minutes. Cut around pan sides to loosen cakes. Turn cakes out; cool completely.
FOR FROSTING: Beat butter in large bowl until fluffy. Gradually beat in 3 cups sugar. Beat in 6 tablespoons milk and vanilla. Add cocoa and remaining 2 cups sugar; beat until blended, thinning with more milk if necessary. Place 1 cake layer, chocolate-chips side up, on platter. Spread 2/3 cup frosting over. Top with second cake layer, chocolate-chips side up. Spread 2/3 cup frosting over. Top with remaining cake layer, chocolate-chips side down. Spread frosting over sides and top of cake. (Can be made 1 day ahead. Cover with cake dome; let stand at room temperature.)
I use a vegan frosting sometimes. It's made of confectioners sugar, cocoa powder and water or vanilla soy milk and a small amount of pure vanilla extract. I don't have the exact measurements because I've always done it by feel. I start with about a cup of sugar, 3/4 cups of cocoa powder and the vanilla. Then I add the water or soy milk until it's the right thickness.
As for adjustments for cupcakes, use liners in the cupcake tray and omit the butter & flower or cooking spray used to coat the pans. I'd try the same temperature of 350 for 20 minutes. Check that they are done with a wooden toothpick.
I've never eaten a cupcake with meat in it. They were all vegetarian.

look up crazy cake or depression cake in allrecipes.com. No milk or eggs, white vinegar and baking soda to make the cake rise. It's yummy too. One of the times I made it was during the summer and couldn't keep the oven on a second longer and I took it out under done and EVERYONE raved about the cake.
