what are some good foods for vegans to bring camping?
keep in mind there will be no electricity and any of the food i'll be cooking will be over a fire.

I assume you will be "packing in", and don't want a lot of weight in your back pack. Given that (assuming I'm right), you'll want something light and compact. Dry your own vegs. You don't need an expensive dehydrator, just an oven.
Coarse dice your favorite vegs, place them on a cookie sheet, and put in an oven set at the lowest temp it'll go. Keep an eye on them, about 4 to 6 hours will get you close. When they're dry, put them in Zip-Loc bags and they're ready. They'll weigh a lot less than when you started, and require no refrigeration to keep.
To reconstitute, boil them in water (or vegetable broth if you want to pack that in), and enjoy.

these are vegan instant meal packets. Pack granola bars, vegan cookies, veggie sticks, and a jar of hummus. Most of that stuff doesnt need a cooler. Premake rice (I would make it moist so it stays moist rather than dry) and carry cans of beans and vegetables. Heat up the rice with the beans. Easy! add some tomato sauce for flavor. Pack sandwiches, (antipasti, vinegared roasted veggies, with vegan cheese, tofurkey, and nut butters) if you pack avocado, add vinegar and lemon juice to keep from going bad. I would do that for all your veggies.

Find your favorite brand or jar your own of your favorite vegan bean, pea or vegetable soup. Also their types of vegan hotdogs, that you can pack and roast over a fire.

Fantastic Foods makes really good food that you can make just adding water, or canned stuff. When I go to festivals in the summer I bring tofu and mix it with their Tofu Scrambler and that's really quick and easy. I bring a lot of canned stuff, or dried stuff that I have to add water to. But I guess it depends on how you are camping. (hiking or drive and camp)

Tofu hotdogs. Cooked over a fire with ketchup are amazing!
Granola, peanut butter, and bread. They are light weight and easy to pack. Pasta could work too, as long as you bring a pot. I love fire roasted veggy dogs. Some nummy dehydrated veggies, or fruits would be great too. If you are camping where water might not be available you should really pack plenty of water, dont underestimate how much water gets used for drinking and cleaning.
Pasta and readymade sauce can be cooked in a trangia.
You can also try veggie sausages.
Marinated veggie kabobs, vegan boca burgers (the original ones are vegan), canned beans mixed with taco seasoning.
