Answers:
Take 6-8 evenly shaped potatoes. Cut them into half and deep fry them. Scoop out the insides with a spoon, leaving a hollow shell. Stuff them with grated cottage cheese mixed with crushed almonds and cashew nuts. Keep these aside. Make a paste with chopped onions, chopped tomatoes, ginger paste, garlic paste and green chillies - you can put them all in a blender, add a little water and make the paste. Heat oil in a pan and temper with cumin seeds. Add chopped spring onions and stir fry for 2 mins. Add the ground paste, season with salt and garam masala powder (Indian spice powder). You may add water to the paste to get the gravy to desired consistency. Add the stuffed potato halves to the gravy making sure that the gravy coats all the potatoes, cover the pan and cook in medium heat for 10-15 mins. Finally pour cream over it and garnish with chopped fresh coriander.

I cooked this for my veggie friend WHO loved it and asked me to make another. I also made it for my hubby how hates veg and he loved it too!
Roasted vegetables with grated cheese on top.
Use Onions, peppers, courgettes, fennel, sprinkle with herbs and top with grated cheese - Delicious
Pick up a bottle of steak and chop marinade at your local supermarket.
You'll need (in whatever amounts you like)
Cherry tomatoes
Mushrooms
Potatoes
Red, Gold, or Green Pepper
Pearl onion
Partially cook the potatoes, pepper, and onion to soften.
Place all the vegetables in a plastic ziplock bag and pour in enough of the marinade to get a good coating, about a half cup. Mix well and marinate for 30 minutes. Bake, broil, roast, or grill until tender. Grilling works best. Yum

Eggplant
Slice some eggplant lengthwise. Sprinkle with salt and place on paper towels. Combine breadcrumbs, grated parmesan cheese, and a little parsley.
Place the eggplant in a shallow baking dish and cover with the breadcrumb and cheese mixture. Broil or bake until golden brown.

Zuccinni
Cut Zuccinni in half lengthwise. Scoop out pulp. Coarsley chop the pulp and put in a mixing bowl. Stir in corn (drained), 1 egg, slightly beaten, fresh (or powdered) garlic, onion powder, bread crumbs, and a dash of pepper. Mix well. Stuff the zuccinni shells with the mixture, top with parmesan cheese and bake until brown and bubbly.

Spaghetti Squash
Slice in half lengthwise. Place face down in a microwe safe dish to which you've added a little water, about a half cup.
Cook until tender. Check it after 10 minutes. I never time it.
When it's tender, use a fork to scrape the speghetti squash out of the shell. Season with a little salt and pour your favorite spaghetti sauce over it, or make some homemade sause. Sprinkle with parmesan cheese.
Get a couple of large sweet potatos and boil till tender (25 minutes or so). Peel and slice into half inch slabs. Place slabs, overlapping in the bottom of a casserole dish.
Take a can of whole cranberries and one cup of brown sugar and two tablespoons of lemon juice and mix together and layer on top of the sweet potatos...sprinkle liberally with cinnamon and nutmeg to taste. Optional to add chopped nuts or raisins to the cranberry mixture.
Place in 350 degree oven for thirty minutes, uncovering for the last ten minutes.
It's really good!
Green pepper, red pepper, mushrooms, courgettes, red onion, tomatoes, garlick. , sea salt, freshly ground pepper, drizzle with olive oil and bake. Serve with sour cream and french bread.
-I love vegetarian chili...Here is the delicious recipe I follow:
2 medium zucchini, chopped
1 medium onion, chopped
1 cup chopped green peppers
1 cup chopped sweet red peppers
3 cloves garlic, minced
3 tablespoons olive oil
2 (28 ounce) cans Italian stewed tomatoes, cut up
1 (15 ounce) can tomato sauce
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can black beans, drained
1 jalapeno pepper, seeded and chopped
1/4 cup fresh cilantro, minced
1/4 cup fresh parsley, minced
3 tablespoons chili powder
1 tablespoon sugar
1 teaspoon salt
1 teaspoon cumin
In lg pot, saute zucchini, onion, peppers and garlic in oil until tender.
Stir in all remaining ingredients.
Bring to a boil.
Reduce heat, cover and simmer for 30 minutes, stirring occasionally.
-Another great one is this veggie stir fry recipe. I make this for dinner all the time, its really good!
1/2 head bok choy, chopped
1/2 head broccoli, seperated into florettes
4 large spinach leaves, sliced
15 baby carrots, sliced into coins
1 can bean sprouts, drained (I was going to use fresh, but was unable to find)
1 can baby corn, drained
3 dashes soy sauce
1/2 jar kikkoman's stir-fry sauce
2-3 dashes garlic powder
6 ounces uncooked angel hair pasta, broken in half
Throw bok choy, broccoli, and carrots into a large pot sprayed with nostick cooking spray, and cook on meduim to medium high heat stirring occasinally.
In a medium saucepan, boil water for pasta and cook until done.
In the meantime, while your vegetables are cooking, add the 3 dashes of soy sauce and garlic powder.
Make sure to stir the vegetables, there should be a lot of juice in the bottom of your pan (I was going to add some cornstarch at this point to thicken the juices into sauce, but he wouldn't let me).
When the pasta is done, add the corn, bean sprouts and spinach to vegetables in large pot, then add well drained pasta.
Stir in the 1/2 jar of stir fry sauce.
-And last but not least is a recipe for roasted vegetables and feta...one of my absolute favorite dishes!
20 ounces mushrooms, whole and drained
1 large red pepper, cored and coarsely chopped
1 large yellow pepper, cored and coarsely chopped
1 zucchini, cut into large chunks
1 small red onion, coarsely chopped
4 garlic cloves, sliced
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon brown sugar
1 teaspoon dried basil
1 teaspoon dried oregano
2 tablespoons feta, crumbled
Preheat oven to 375 o F (190oC). Combine mushrooms, peppers, zucchini, onion, and garlic in 9 x 13 inch (3L) baking dish.
Stir remaining ingredients except for feta in a small bowl. Drizzle over vegetables and stir in to evenly coat.
Bake in oven for 20 minutes.
Sprinkle with crumbled feta cheese. Serve.

Layer veggies and cheeses in a glass dish. Bake at about 350 until cheese is melted and veggies are good and hot. Takes awhile to cook but it is very creamy and yummy!

Maybe not best ever, but very good and easy to make.
I used 2 cans of vegetable broth (~16 oz cans) in a large cooking pot. Took one napa cabbage and cut it up in smallish pieces (and washed it) and put it in to boil. I added a little black pepper for taste. Then near boiling I added one bunch of vermicelli noodles (mung bean noodles AKA transparent noodles) and let it boil and then simmer till the noodles soaked up the broth.
That goes well with rice or other noodles or by itself as a soup dish.
my mum made a vegetarian curry (really light as i cant stand spicy food) with tofu and it was absolitely gorgeous none of the family even realised it wasnt chicken, so good if your missing meat!!!
Butternut squash soup - simply souper!!
Cut one butternut squash in half lengthways & scoop out the seeds. Place it cut side up in a roasting tin, brush the cut side with melted butter & scatter some chopped or minced garlic over. Stick in the oven at about 190 C for approx 45-60 mins depending on your oven, take it out when the flesh is nice & soft and there's the irresistible aroma of baking garlic wafting round the kitchen.
In the meantime, chop an onion or two & sweat gently in some olive oil. Chop up a couple of carrots and maybe a potato and add to the onion. Cook it all up until nice & soft. Scoop the flesh out of the cooked squash and add to the pan with the onions & veg. Mix it all together, then add some vegetable stock. How much stock? Well, whatever looks about right. I usually go for about half a litre, but it depends on the size of your squash and how much other veg you've added.
Heat the whole lot through together for a few mins, then remove from the heat. Whizz it all up in a blender and serve decorated with a splodge of sour cream and chopped parsley.

vegetarian lasagna with spinach
My mum makes me this gorgeous pasta dish. Just cook the pasta for the usual amount of time, and also boil up some vege, can be anything you like, I tend to have sweetcorn, brocolli, cauliflower and carrots. Add them together with some cheese sauce and put under a grill or an oven for a few minutes until it gets brown on top. Also nice if u put some crunched up crisps on top as well. :)

KIDNEY BEAN KIEV is my new addiction. I love them! This is just a guess on the amounts so if you make it I hope it works out ok.
You can substitute the veg for anything you have like broccoli, spinach, green beans, celery...
Note: To make it vegan substitute the butter for vegan margarine and substitute the egg for vegan mayonnaise.
Make about 4
--Garlic Butter--
8 tbsp Butter
3 cloves Garlic, minced
1 tbsp Parsley
-Mix together and roll into 4 balls.
-Cover with baking paper and put into freezer to harden.
--Kiev--
2 tins (cans) (650g) Kidney Beans
100g Peas
1 Leek, chopped
250ml (approx) Breadcrumbs
1 tbsp Parsley
1 (free range) Egg
-In a bowl mash the kidney beans with 3/4 of the breadcrumbs and mix well.
-In a pan with a little olive oil saute the leek and peas for about 5mins. Add kidney beans and mix well. Remove from heat and allow to cool. (Cool enough to handle)
-Shape the kidney beans into 4 ovals (large egg size) with the garlic butter in the middle of each kiev.
-Dip each patty in the egg and then roll on remaining breadcrumbs.
-In a pan with some olive oil fry the kievs for about 7-10mins turning once.
