Black Bean Patties with Cilantro and Lime
From Cooking Light
1 tablespoon olive oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 tablespoon minced jalape?o pepper
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 garlic cloves, minced
1 (15-ounce) can black beans, undrained
1 1/2 cups dry breadcrumbs
1/4 cup yellow cornmeal
2 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice
1/4 cup (1 ounce) shredded Monterey Jack cheeser (rennet free or vegan cheese)
Vegetable cooking spray
2/3 cup salsa
Heat oil in a large nonstick skillet over medium-high heat. Add onion and next 8 ingredients (onion through garlic); sauté 3 minutes or until onion is tender. Add beans; sauté 1 minute. Combine bean mixture, breadcrumbs, cornmeal, cilantro, and lime juice in a large bowl; stir well.
Place 1 cup bean mixture in a food processor, and process until smooth. Add puréed bean mixture and cheese to remaining bean mixture; stir well. Divide mixture into 10 equal portions, shaping each into a 3-inch patty.
Wipe skillet clean with paper towels. Coat skillet with cooking spray, and place over medium-high heat until hot. Add 5 patties, and cook 3 minutes or until browned, turning patties carefully after 1 1/2 minutes. Repeat procedure with remaining patties. Serve with salsa.
Yield: 5 servings (serving size: 2 patties and 2 tablespoons salsa)

Beans are wonderful bases for veggie burgers.
I like the "black beans" for this. Take a 15 ounce can of black beans and drain the juices from it. In a medium bowl mash the beans and add 1/4 cup sauteed onions, 1 tiny 4 ounce can of green chiles drained,
1/2 teaspoon dried oregano, 1 small clove garlic minced fine. Mix together then add salt and black pepper to taste. Crush some corn chips finely enough to add to the bean mixture to give it a thick consistency. Let this sit for about 30 minutes in refrigerator until the juices are absorbed by the chips. Remove from refrigerator and divide into portions then flour each bean burger portion then cook in hot olive oil until heated through. keep on high at first then turn heat down so the beans do not burn. Serve with avocado slices plus a nice green salad topped with tomatoes, corn, olives and wine and vinegar dressing...

have you tried anything in the veggie section at wal-mart or your local grocer? they have veggie burgers. do you not consider them healthy?
Beet this Burger (grand prize winner)
The burger has the unusual addition of 1 tbs of grated beets -- just enough to give it a pleasant color.
1 Tbs finely grated raw beet
1/2 cup cooked oats (quick or regular rolled oats)
1 cup uncooked oats (quick or regular rolled oats)
1/2 cup walnuts, coarsely ground
1/4 cup almonds, coarsely ground
2 Tbs sesame seeds
1 Tbs Vegix seasoning or instant vegetable broth
1/4 cup green pepper, minced
1/4 cup celery, minced
1/4 cup onion, minced
1 tsp dried basil
1/4 tsp dried thyme
1/4 tsp dried thyme
1/4 tsp ground sage
1/4 tsp mustard powder
2 Tbs soy sauce
1 Tbs nutritional yeast flakes (optional)
Mix all ingredients together well. Form into patties and gill until cooked through. Serve on whole wheat rolls with tomato slices and your favorite condiments.

Judges Choice: Tofu Burger
yield: 6 burgers
Ingredients:
1 lb tofu
1/2 cup whole wheat flour
3 Tbsp. nutritional yeast
2 Tbsp. vegetable bouillon powder
pepper to taste
2 Tbsp. soy sauce
1/4 cup (or more) sesame seeds
1 small scrubbed potato
1/4 tsp. (or more) garlic powder
onion powder to taste, or one small onion
Grind the tofu, potato and onion (if using) in a food processor. Don't let it get too fine. Mix in remaining ingredients, shape into burgers and bake at around 350 degrees on a very lightly oiled cookie sheet for 15-20 minutes, turning once. They can also be fried.

Sunburgers
2 C sunflower seeds, soaked 6-8 hours
1/2 C carrots
1/2 C celery
3 green onions, sliced
1 red bell pepper, sliced
1/4 C fresh basil
1/4 C frsh parsley
Braggs to taste
Process all ingredients with S blade in a food processor. Make patties and dehydrate at 105 degrees for 12-24 hours until dry. Turn patties over when dehydrating on a teflex sheets after 6 hours (or in opean oven on lowest temp. for about 2-4 hours).
