How to make aata dough soft??

I have tried to make the dough soft,but cudnt make soft chapatis..Pls suggest me how to make soft ones.

after kneading the dough, dont use it immediately, let it 'rest' for a good twenty minutes. keep it covered with a moist cloth while it is 'resting' so that it does not dry. also try adding milk while kneading, u can also use leftover water after making 'paneer' or even a little buttermilk. finally dont let the chappatis stay on the 'tava' for too long, cook them quickly over a high flame. if u cook them on a slow flame, they will always turn out dry and hard. the trick is to make them 'bloat' if they 'bloat' up, then it will be soft. finally, while rolling out the chappati, make sure u have rolled it out evenly otherwise the chappati will never expand and never turn out soft. all the very best.

The trick is to pour the water in small amounts (and not all at once) as you knead the dough.

Add some milk to the dough. But not too much.

There are 2 - 3 methods to do it.
1. add a little salt and oil to the flour before kneading.
2. add some curds to the flour & then knead Or u may knead the dough with yoghurt [taak] itself.
3. if u eat eggs, then do whisk an egg with little oil and add to the flour before kneading.
4. u may add some milk and/or milk powder to the flour & knead.
Lastly, do rest the dough [after kneading] for atleast half an hour ----- the more the better.
& after roasting the rotis, smear a little ghee/butter on them & serve hot.

Add little milk, ghee and little sugar apart from water and salt. knead it well and rest it for some time in a closed container. Milk and ghee makes the chapathi soft.

Simply just add milk n malai inthe dry flour don't add water.This will make chapatis really soft.

to make atta dough soft u can use sour curd.take atta as required make a well in the center take some amount of curd & mix add water if required.your chappatis will be very soft.

My mothers tip to make the aata dough soft:

Put little water & dough the atta slowly. At the end u will find the dough is bit tough then put little water to just make it soft. this time the dough will be perfect one i.e. neither too hard or too soft.

Adding milk in atta keeps the roti, paratha, puri safe for a long time. We put it when we are going out in train for 1 day. Rest whatever you add in atta before dough give an additional taste to the parantha.

For 2 glasses of flour, you have to mix 4 table spoons of oil, 1/4 cup of milk, and enough salt. mix it well.

Take enough luke warm water to knead. Do not pour all the water at once. Pour as needed and keep mixing till all the flour becomes a wet ball. Then stop pouring the water. Just knead it nice and gently until you do not have any sticky dough on your hands.

Let the dough stand for at least 30 minutes covered. Then make the chapathi. One more thing, always heat the pan in medium OR medium high heat.

just pour h2o (water) and kneed on it very hard .

the best is put a spoon of oil in the flour and mix properly - this will make the dough soft then add like Luke warm water & mix - its my own experience, and i hope it solve your problem

use milk while preparing it.
