Why do they sell bags of lettuce with just Romaine hearts?
I know that Romaine lettuce in general is a darker green leaf which means it's healthier than say Iceberg lettuce. But I wonder why they sell just the Romaine hearts. What about the rest of the leaf? Are the hearts healthier? Do people like the taste better?

Some people actually do like just the hearts. I wait tables and on several occasions, I've had clients ask for just the hearts instead of leaf lettuce in their salads.
They supposedly taste better (sweeter) and have better consistency in Caesar salids.
