Does anyone have really tasty veggie recipes?

I want to help my brother out. Hes a vegetarian and he eats the same ole ten recipes he has. Lol. Even more I have been trying to make the change. I hate eating meat. Im trying to get some really tasty foods so it will be easier for me. We dont eat gelatin either. Since we found out what its made of.

Marinade vegetables like bell peppers, onions, zucchini, squash and red potatoes in olive oil and apple cider vinegar. Add your favorite spices. Marinade for at least 24 hours, then grill. Eggplant is also good this way, topped with a marinara sauce.

I would say Loma Linda vegetarian meat with some white rice and vegetables. You can pick up Loma Linda foods from a health food store in your neighborhood. Loma Linda products come in various forms. So you can have ground vege meat, steaks, franks, and other ones. Depending where you live. If you live in NYC you can IM me and I can tell you different places you can go with a lot of different vegetarian foods. Be prepared to spend some money!

I do! I've been vegetarian for 10 yrs now and I love to cook.
My favorite is mexican. Here is a recipe for vegetarian enchiladas. Once you know how to make enchiladas (super easy) you can make them with any veggies you want.
You will need: corn tortillas, colby jack shredded cheese (you can use VeggieShreds if you want), onion(optional), fresh spinach, pablano peppers(optional) better if roasted, canned enchilada RED sauce (you can add some fire-roasted canned tomatoes or extra spices if you want, add some masa for thickness if you prefer.
Most people dip the tortillas into hot oil so that they are plyable, but I save the fat by microwaving some for a couple seconds. After the torts are flexible, dip them into the sauce and simply fill with the spinach and pablanos and onion, put in a pinch of cheese and roll up tightly. Do like 3 on a plate and then top with lots of the sauce and cheese. I microwave mine, but if you are making a lot, put them in a baking dish and bake til melty. Garnish with tortilla chips, lettuce, sour cream and pico de gallo!

This is an authentic Indian recipe. In a lil oil, fry chopped onions, few garlic flakes, crushed ginger or you can use ginger garlic paste, till onions are transclucent, add chopped tomatoes or concentrated tomato paste and fry for a couple of minutes.To this, add crushed red chilli flakes or cayenne pepper, or chilli powder, salt to taste and half a tsp of cumin powder, fry for a min, add in eggplant, slliced lenghtwise and 2 to 3 tbs of veg stock and cook till eggplant is done, garnish with cilantro or parsley and serve over rice, or use as a side dish with soup, rolls, as fillers for sandwiches, in tortillas wraps or can be even eaten with chips or crackers or as a dip with nachos. you can add a dollop of sour cream if needed.This dish can be made by substituting eggplant with other veggies such as just tomatoes, or stirng beans, okra, garbanzos, zucchini, squash, cauliflower, broccoli or potatoes.Each vegetable provides its own unique flavor and taste although rest of the ingredients remain the same.Its simple and can be made in minutes. hope this helped
