Pasta Primavera
This is a little different; this pasta primavers is baked as a casserole.

Change to: servings US Metric
1 (16 ounce) package ziti pasta (or pasta of choice)
2 zucchini, cut into strips
2 red peppers, cut into strips
2 cups sliced fresh mushrooms
1 cup chopped scallions
olive oil
2 cups chopped fresh tomatoes (canned will do)
1/2 cup all-purpose flour
2 cups milk
2 cups chicken broth
1/2 teaspoon nutmeg
1/4 teaspoon ground pepper
2 (10 ounce) packages each frozen choppen spinach (thawed and drained well).

Cook pasta as directed and drain. Spoon into prepared 13x10x2 in baking dish (spray with olive oil).
Saunted veggies in oil for 3 or 4 minutes.
Add tomatoes.
Spoon all over pasta.
Place flour in the skillet.
Blend in milk.
Add broth, nutmeg and pepper.
Cook and whisk over medium heat until mixture thickens.
Add spinach.
Pour over vegetables.
Cover.
Bake at 350 degrees for 40-45 minute.

cook your veggies of choice till amost done, put all together in a pan... add a little olive oil and fresh crushed garlic and season with herbs and salt and pepper & simmer together for a few minutes. Then add your cooked pasta (I prefer whole wheat) to the mixture and toss. Sprinkle on a little fresh parm. cheese if you've used Ital. seasonings (oregano, basil, etc. or an Ital. seasoning mix). You almost don't need recipes for things like this... just be creative. You can even add a little cayenne pepper if you like it on the spicy side.

You could make a sort of Thai peanut sauce (nat'l pb, rice vinegar [cider vinegar is okay too], crushed garlic, cayenne pepper, a little juice of fresh lime or lemon) water as needed, as pb thickens, for the pasta then add the seasoned veggies over top too.

okay i have made this recipe a thousand times. it is so simple you don't even need instructions for it.

you need: pasta (any kind), green and red peppers, onions, jeera, salt, oil, and pesto.

buy any kind of pasta (my favorite is bowtie). while boiling it, cut up a lot of green and red peppers, and also onions. shallow fry these along with some jeera and add salt at the last minute so the veggies get soft.

after you are done boiling and draining the pasta...put in some pesto (depending on the amount of pasta being made) and mix so that it is evenly spread. then mix in the fried veggies.

now you have a yummy vegetarian dish. i would also advise to bake some french bread or garlic bread along with it.

ps- dont forget the salt in the pasta. put it in while it is boiling.

Use amazing meatless meatballs (Trader Joe's), they are great in a traditional ravioli and meatball recipe :)
