Answers:
A vegetable lasagna with mushrooms, spinach and corn.
This dish can be served on it own or used as a sidedish.
Experiment with different vegetables according to season an preference.
(Serves four to six people)
1 medium onion,chopped
1/2 cup carrots,grated
1 Ib. spinach
5oz. sweetcorn drained 1/2 tin
1/4 Ib. mushrooms coarsely chopped
8 oz. lasagna noodles 1/2 packet
2 garlic cloves
1/4 Ib. cheese grated
Sauce
2 -1/2 cups milk
2 oz. cornflour (cornstarch)
2 oz. butter
1. Gently fry carrots and garlic,onions and mushrooms,in butter set aside.
Wash spinach good, and cook gently in saucepan without adding water. Stir frequently this really does work and it stops it from going slimy. Add corn to this and set aside. Now make the white sauce. Melt butterin a saucepan,take it off the heat,add cornflour(cornstarch). Mix this well,slowly add milk. Stirring all at the same time. I t important not to stop stirring,even for a moment. Return it to the heat and keep stirring until it thickens. Now,start building your lasagna. Take a large square oven-proof at least 2 inches deep ( we use one about 8 x 12 inches ) and as assembled in layers starting with a layer of lasagna, then a layer or white sauce,vegetables pair combination,at this point you should be running out of vegetables, if all is well. Finish lasagna and then sauce. Top with cheese,sprinkle with paprika if you want.
Bake for 35 minutes at 350 degrees.F.

just take some carrots soak them in water then put in in the food processor blend it until its soft then put in a small bowl and done.

Mashed Sweet Potatoes

Ingredients:
3 medium sweet potatoes
? cup milk
? cup heavy cream
2 tablespoons unsalted butter
1 tablespoon packed brown sugar
Pinch ground cinnamon
Pinch ground nutmeg
Pinch salt
Procedure:
In a pot of boiling water cook sweet potatoes with their skins on until tender. Cool and peel. Dice sweet potatoes and place in a saucepan. Add milk, cream, butter, brown sugar, cinnamon, nutmeg and salt. Heat the potatoes through, stirring frequently. Mash to desired consistency.
The nurtitional info is on the sweet potato only. You would have to calculate the rest of the ingredients. I never used the heavy cream, I used all 1 percent milk as I am watching my weight.

try these
Avocado chunks, sheets of nori seaweed, tofu chunks. I suggest the avocado for it's beneficial vegetable fats and the nori seaweed because of it trace minerals. If you put peanut butter on anything, add some molasses for the iron content. Lentil soup (with a spot of molasses, too!) Cooked chic peas. Add some spices to things (as long as it's not hot spices) so your child will be open to new things. If your child doesn't like a particular food, offer it with ketchup. I didn't do that with my own kid and he eats nothing- if only I had taught him to mask some flavors...
Go to www.vegweb.com if it wasn't for that site I could have never gotten all 4 of my children onboard. 3 of them are younger and used to pizza and stuff but that site helped me and has kept me going for over 5 months now.... stir frys-buy chinese style packs of veg and fry them, adding sweet n sour sauce.

For breakfast I like to mash a banana in with oatmeal and chocolate soymilk, then heat it up like normal. I'm 22, but I would imagine a 15 month would like it just as much as I do :)
