To make yourself or buy? How about vegetarian Indian (samosa, barji etc) or Chinese (dim sum, spring rolls etc)snacks , sandwiches, quiche, potato skins, lots of different salads, and the usual nuts and crisps. How about a nice cheese board - you can buy vegetarian cheese and you could have celery, apples, grapes along with a nice selection of biscuits. Vegetarian pate and nice crusty bread...

u can try Chinese vegetarian food no bad cos i today just eat!!! haha.. i at Malaysia...

Cherry tomatoes, alfallfa sprouts cucumbers , cheeses, fruits, olives.. triscuits the new ones with the rosemary flavor. cream cheese, with Jalapeno jelly over it... ( use about 1/2 a jar) it is beautiful and wonderful.Humus is delightful on crackers. To make a buffet complete I would offer several crock pots of veg soup. perhaps a french onion soup and maybe a cream of brocolli and cheese. A nice big bowl of endive hearts with spanish sliced onion rings, and a variety of dressings. for a nice desert, unsweetened yogurt, cherry pie filling layered with graham crcker crums in a crystal bowl.

Have you considered going multicultural? Have you considered creating something new, by splicing parts of dishes from a variety of commonplce dishes together, like an experiement.

One example of how this might work could be the following:

Falafel strips, rolled in lebanese bread, and topped with ketchup and mustard, and washed down with chinese green tea.

or

Kidney bean based chilli, smeared with dairy free yogurt, sprinkled with lemon juice, sitting on a bed of jasmine rice, with a side of a stir fried vegetable jaffle, and a curry puff.

If your buying then sainburrys has some nice frozen things ie indian selections, cheese straw type stuff and plenty of dips. As a centre piece to ant buffet i make is a dish with no name.
Take a can of mixed beans, drain and add to some nice pasta sauce.Now add far more finger chilli's than anybody should,top with cheese and bake in oven till cheese melts.Serve with bread sticks and something cold to drink.enjoy!

veggie sushi, spring rolls, fruit kebabs with yogurt dipping sauce, veggie kebabs with bbq sauce, battered mushrooms and okra, stuffed jalapeno peppers, hushpuppies, raw veggies with hummus, artichoke dip, spinach dip, mochi with homemade pimento cheese, melon balls, celery stuffed with pimento or almond butter, arancini, steamed rosemary potatoes, raw kolrabi and jicama sticks, parsnip puffs. potato puffs, grilled pineapple, curried cous cous, yogurt parfait.

cheese and pineapple on sticks, vegetarian cocktail sausages on sticks, quiche (normally popular), pizza slices, vegetarian sausage rolls...to be honest most stuff used in a buffet for meat eaters can be substitued for a vegetarian option you will be surprised how much vegetarian food is available on the market at the moment!
