Side dishes for a diet?
Hi, does anyone have any good, and easy, recipies for healthy side dishes? I'm looking to make sides that don't include rice, pasta, or potatoes. I'd just like to make something different than a regular side salad. Thanks!

Cut thin strips of red pepper and green pepper, sautee them with a little bit of onion (just a little), pour a little bit of fat-free chicken broth (like Swansons or College Inn) just to make it a bit moist.

Just cut up tomatoes in nice slices, salt and pepper them, and serve.
Another one: (It has a name with a c,but I can't remember it)
Cut some grape tomatoes in half, add cubes of mozzarella cheese, add some fresh leaves of basil, sprinkle with salt and toss with some olive oil. Yum!
Here's my family's favorite: German cucumber salad
Peel cucumber. Slice very fine in large thin slices. Add some vinegar, salt, pepper, and dill. Let sit for 5 minutes. Add some sour cream or 1/2 and 1/2. It should have a bit of a tangy taste. YUM!

I like the california blend of veggies steamed. They consist of brocoli, cauliflower, and carrots. I also like steamed peas and carrots with the little baby onions. Sugarsnap pea stirfry is also good--you can steam it without any oil.
Get a bag of your favourite mixed veges and place some in boiling water for 10 minute. Drain, season and serve

carrots
2 tablespoons butter

INGREDIENTS:
1 bunch collard greens - rinsed,
trimmed and chopped
2 smoked ham hocks
2 (10.5 ounce) cans condensed
chicken broth 21 fluid ounces water
1 tablespoon distilled white
vinegar
salt and pepper to taste
DIRECTIONS:
1. Place the collard greens and ham hocks in a large pot. Mix in the chicken broth, water, and vinegar. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer 1 hour.

This is a good one, easy too:
Get some broccoli and an onion, cut them into bits and pieces
Add some dried cherris and sunflower kernals
Mix up some vegan mayo, red wine vinegar, and sugar in a seperate bowl. Mix it all up until the sugar dissolves.
Mix everything up in large bowel and let it sit in the fridge for at least an hour, or up to a day.
