Not to be rude, but you should do an Answers search for veg. recipes. This question is asked every day. There are thousands of recipes available, many more than will get posted to answer your question.
But, my personal fav. is veg. lasagna. I posted my recipe and got best answer about a week ago. Search for it.

Mojito Mashed Sweet Potatoes Recipe courtesy of Rachael Ray

Episode: Havana Breeze
2 sweet potatoes, peeled and sliced
Salt
2 tablespoons butter
2 tablespoons sugar
2 shots rum or spiced rum
2 limes, juiced
Handful mint leaves, chopped
Place potatoes in a small pot and cover with water. Bring the water to a boil and salt it. Cook potatoes until tender 15 minutes. Drain the potatoes and return to hot pot and mash with butter, sugar, rum, lime and mint. Season the Mojito Mash with salt, to taste.
1 can of cream of mushroom soup
1 capsicum diced
1 onion diced
1 carrot sliced
2 cups of broccoli
1 cup of cauliflour
1/2 cup of cheese
1 cup of peas/beans
1 cup of water
1 teaspoon of garlic
1/2 cup of corn
3 cups of cooked pasta
All you have to do is mix together put cheese on top and bake for 35mins on 180 degrees
it tastes really yummy and is perfect with a cold night
its also good if u serve it with salad and even warm breadstick or garlic bread.
If you like Chili, one of my favorite things to make is vegetarian chili cause its delicious and low fat
1 can chili beans (check ingredients for animal products)
1 can refried beans
1 can diced tomatoes and green chili's
1 packet of chili seasoning
and then hot sauce to taste, I like valentina's.
It's a super simple recipe and it makes quite a bit so its good for sharing. enjoy
Marinara Sauce
Saute 4 onions, 6 cloves garlic, 1 cup olive oil, 2 tbsp rosemary, 1/2 cup basil until garlic starts turning brown. Then add 5 or 6 cans diced tomatoes, 2 cans tomato paste, 3/4 cup parsley. Cook with a very low flame for 3 -4 hours. Add 1/2 cup red wine and salt to your taste. Add to pasta.
How about veggie burgers: I can 16oz pumpkin, add soya sauce to taste. Mix in oat meat and wheat germ enough to make mixture stiff enough to form balls. Optional add in barbecue seasoning or seasoning salt! Mix & form balls and the flatten into burger shape and cook in vegetable oil! A meat eater wouldn't be able to tell it from the real meat. Also these veggy burgers are very tasty I make them lots of time!
( I use to crush up soya beans and make sauce but I find soya sauce works just as well and less effort!) For a postage stamp I can set you a floppy disk with veggy recipes on it!
