I want to know YOUR meals!?

What is your favorite, healthy, vegetarian meal??
Don't give me links to recipe sites! I want YOU telling me what YOU actually eat!! Quick meals a plus!!


Answers:
I am not a veggie, but find my self eating less and less meat anyway.
I love to saute some mushrooms with olive oil and garlic, cook up some pasta, drain it and put it in the skillet with the mushrooms and oil and mix well and enjoy. I can add broccoli, zucchini, yellow squash or whatever else I want to it. Yummo!

good quality feta cheese marinated in oil and herbs.....on top of some good sourdough bread and put in the toaster oven for a few minutes till the bread crusts up and the feta starts to bubble and melt......good stuff.

Black beans or refried beans, Mexican rice, cheese, olives, tomatoes, and sour cream sitting on a bed of shredded lettuce with tortilla chips on the side.

Sorry, but I cant help you because Im not a vegetarian. I love meat to much : ) However, you can always make stir fry w/o the meat. The vegetables are delicious by itself.

I kind of like vegetables and i don't know if its healthy put i like Kung Pow Chicken..its Chinese food its so good it has little pieces of carrots,mushrooms,chicken off course,like a pumpkin vegetable that looks like cucumbers that are choped.its so good....try it in Chinese restaurant if you like Chinese food just eat it with white rice it tastes even more good...also white rice is good.I even want some right now...>..>I hope it helped just say Kung pao chicken and separate some white rice...its so delicious :)

i love the subway veg. sub. it has only veggies on it. its really yummy

I like stuffed green bell peppers. Super easy to make!

You will need:
4 large green bell peppers
15oz can black beans (rinsed and drained)
8 and 3/4 ounce can whole kernel corn (drained)
1/2 cup chopped onion
1/3 cup long grain rice
1 to 2 jalepeno peppers, chopped (optional)
1/8 tsp salt
2 TBS snipped fresh or 1/2 tsp dried cilantro
3/4 C shredded monterey jack cheese

1)Fill a large pot half full of water; bring to boiling. Meanwhile, cut tops from sweet peppers. Remove seeds. Chop sweet pepper tops, set aside. Add whole sweet peppers to boiling water; return to boiling. Reduce heat and cook, covered, for 4 to 5 minutes or till just tender.
2)Meanwhile, in a medium saucepan, combine chopped sweet pepper tops, black beans, corn, onion, uncooked rice, jalapeno peppers, salt and 1 cup of water. Bring to boil. reduce heat. cover and simmer about 15 minutes or until rice is tender. Stir in cilantro and half of the cheese. toss to mix. If necessary, let rice mixture stand 5 minutes or till water is absorbed.
3)Fill sweet peppers with rice mixture. Place in a 2 QT baking dish. sprinkle with remaining cheese. Bake, uncovered in a 400 degree oven about 15 minutes or untill cheese melts.

I like to stir-fry a crap load of veggies and tofu and put it on top of rice with (vegan) vinegarette.

If I'm feeling lazy, I just whip me up some shells and chreese ( a vegan mac and cheezish type meal, I like it better than the real thing!)
