Something simple is to just buy the regular taco/burrito/fajita kits in the boxes (made by Old El Paso, for example) but use veggie ground "meat" instead or ground beef. So yummie!!!!! :)

Black bean burritos and soft tacos are a hit at my place! So are black beans and rice. You could make veggie fajitas, quesadillas, or enchiladas. That's the great thing about Mexican cuisine!- it's versatile enough so the meat can be eliminated.
