Question:

Vegetarian recipe? What could.......?

I make that would be like taco's with lettuce, tomatoes, tortillas, etc.


Answers:
black bean tacos (vegan):
-- 1 can (15 oz) black beans
-- 1 can Rotel diced tomatoes (these have green chilies in them and I like
the way they
are spiced, but you can substitute Mexican style diced tomatoes . . .)
-- 1/2 can Fresh Cut corn (or you can use frozen kernel corn which you have
thawed but not cooked)
-- 6-8 corn tortillas
-- cilantro, lime, your favorite salsa, any of your favorite taco fixings

Drain and rinse the beans and the corn. Put in a sauce pan. Drain the
tomatoes and press with the back of a spoon to squeeze out as much liquid as
possible. (I usually save the juice for other things). Dump the tomatoes in
the pan as well. If you wish to add seasonings to this mixture to "spice it
up" feel free. I usually mix in some of the salsa that I will be using . . .
Anyhow, heat thoroughly. Warm the tortillas -- I usually do this directly on
top of one of my burners to get the tortillas brown and kind of crisp.
Divide the bean mixture between the tortillas and top with your favorite
fixings. I usually add salsa, a squeeze of lime juice and some cilantro but
you can experiment to see what you like best.

meatless taco filling:
1 c rice (white or brown)
6 cloves garlic, minced
2 small onions, minced
1 can stewed tomatoes
1 can chopped green chiles
1 pkg taco seasoning

Prepare rice as usual. While rice is cooking, saute garlic and onions in
a little water and cooking spray. When onions are slightly translucent,
at chiles, and tomatoes. Cook for 30 seconds, then add 1/4 c. water and
taco seasoning. Cook for a few minutes, then add to rice. Serve with ff
tortillas and your favorite taco toppings!


taco mix:
1 onion, sliced
1 clove garlic
0.5 kilogram (1pound) canned tomatoes
0.5 kilogram (1 pound) cooked kidney beans (I use canned)
Cajun spice and black pepper

Place the onion and garlic in a little water and saute. Add canned
tomatoes and kidney beans with cajun spices and black pepper. Heat
through and cook until desired consistency is achieved. Mash for use in
tacos and burritos.

You can add vegetables to this if you like, or cook it for longer for a
fuller flavour but for a filling and healthy meal in minutes I defrost a
pita bread, spoon in this mix and sprinkle some cheese on top. It is a
great (if slightly unorthodox) burrito!

Use tofu instead of meat add taco seasoning like you normally would.

First 2 pounds of ground beef, then 1 pound of chicken, 3 pounds of pork, then five tablespoons of pork lard fry meat in lard roll in tort yum

Morning Star Farms has this fake steak and chicken I like to use when I choose to have meatless meals. Once I gave my Mom a "fake steak fajita." She could not tell the difference.

Vegan with a vengeance is a great cook book use soft tofu. I have seen at Lassen's this great marinated tofu frozen Mexican style check whole foods too. My son likes boca burgers broken up and then put in the shell with all the other fixings I make the tortilla fresh for him since most use lard you can find masa at most markets now

Try these veggie tacos. They are delicious and really easy to make.

Make tacos. Use ground replacement meat made of soy. You can also mix the seasoning with brown rice or lentils.
