Lactose Intolerant/Mac and Cheese?

I'm LI and for some reason I have really been craving Macaroni and Cheese lately. It use to be my favorite when I was little girl. So, I went to the health store and tried a frozen soy mac and cheese dinner. It was disgusting. So, I'd appreciate any recipes, tips, advice on where to find a good substitute. Thanks : )

I like Amy's Soy Mac-n-cheese, but see for yourself if it suits you.

Another option is to make your own homemade macaroni & cheese, but use a soy-based cheese that you like as a substitute for the real cheese, and soy- or rice-milk as a substitute for the dairy milk. I have this too, and I crave dairy sometimes because I'm not getting the nutrients which were in the things I used to eat. Usually a calcium supplement and a vitamin will clear up the cravings.

The alternatives are usually crap, and will not taste like what you expect from real milk. You just have to get used to it.

have you tried lactase pills? you just pop one with your first bite of dairy, and it adds the enzymes your body is lacking to digest the lactose. they can be expensive, but completely worthwhile. you should be able to find them near antiacids/laxitives and the like. you can usually find generic store brands in large chains for less $$.

to me, it definitely beats relying on fake dairy products, which generally are pretty gross.

here use vegetable cheese its in the produce area and use it with soy milk and shells or elbows
