Vegan recipes?!

Question:

Vegan recipes?

Does anyone have a vegan recipe or the name of one that you would recommend that's easy to make and find ingredients for?

Answers:
There are tonnes here: http://www.vegweb.com

Vegan food is so easy to make: Spaghetti Napoletana-durum wheat pasta (the normal kind you find in the nonfridge section of a supermarket) with a homemade tomato and basil sauce.

Vegan chilli made from onion, garlic, vegemince, chili powder, kidney beans and a sauce (tin of tomatoes, tiny amounts of sugar & salt, and a teaspoon of yeast extract) served with rice.

Vegan fajitas- packet of flour tortillas, small amount of warmed refried beans and warmed salsa mixed with fried vegemince or tofu + chillies and onion, served with salad and vegan cheese (if available).

Vegan pizza: dairy-free pizza base topped with passata sauce (plain tomato and basil sauce), with mixed veg (mushrooms, onions, peppers etc- vegan cheese if available) and put in the oven for 10 mins or so.

Nearly every recipe imaginable can be modified to be vegan.

Egg = In savoury dishes, replace with vegan egg replacer, soft tofu or firm tofu. In sweet dishes, replace egg with applesauce, banana, olive oil and vegan egg replacer.
Milk = Rice milk, soya milk
Margarine = vegan margarine
Cheese = Either a store bought vegan cheese, or a homemade vegan cheese sauce is good. You can also get away with not using any replacement in some recipes.
Meat = vegemince or other textured protein, firm tofu, seitan (wheat meat/gluten), tempeh.
Cream: You can buy vegan cream. You could probably make something similar from blending soft tofu with vanilla and a couple of spices.

When using fake meats, try adding a teaspoon of yeast extract (Marmite/Vegemite) spread to make it taste super savoury and yum! Most fake meats come tasting 'plain', so you can add your own spices. Check out a vegan web site for advice on cooking tofu- some people like soft, some people like it deep fried and more 'meaty'.

Good luck! Vegan food is SUPERB!
