Light lunch for vegetarians?
I am etertaining two vegi friends for lunch and want something easy and tasty I am doing pie for afters. .one eats salmon but the other does not like tomatoes or cheese.
any ideas most welcome

Soup & Freshly Baked Bread.
i like hummus and pita bread. you can put the pita bread in a toaster and make it crispy if you want - that's how i like it. pine nuts (i like em roasted) and kalamata olives, and red onion slices are good garnish on that. i would say feta cheese and tomatoes as well, but your friend doesn't like that. i love hummus and pita bread though.

How about vegetarian chili or a chilled cucumber soup with a nice salad?

Mushroom omelettes
baked shrimp ---put butter, lemon,garlic salt on shrimp and bake 375 degrees for 15-20 min. i do a twice baked potato with it: bake the potato,cut long ways in half .take a spoon and take all the pulp out (white stuff).mix pupl with milk butter chives salt pepper. spoon back into the potato skins. i add cheese on the top and briol it to brown the cheese but you could skip that part.
Omelette is a fantastic idea, but you want to make it a bit special.
Try spinach, rocket and watercress.
It's real tasty.
Maybe even present it with a small side salad featuring avocado, green queen olives, frizee lettuce and garlic croutons
well you could have fake meats like veggie chicken or burgars or even ham, there is everything in veggie
Salad!
Get some tortillas, spread salsa (or mayo) and salad on (leave tomatoes off for the one who doesn't like them). Then add some Quorn tikka pieces and roll up to make a veggie wrap!!

Nice Vegetable Soup
Jacket Potatoes are even vegetarian if you look in a specialist shop. We are simple folk who eat real food you know. We don't needed to be treated in any special way, just don't give us meat for Christ sake. Dude!
vegetarians that eat fish aint vegetarian, thats lucinda and tarquinism. "oh i cant stand animal cruelty, but its ok to eat fish isnt it?" give them the left overs from a farmers wellie boot when hes been up to his ankles in pig crap, but make sure you tell them its "organic" and "free trade". hey they'll be your bestest mates till next week when the jones discover tribal circumcision is the "in thing" .

Oh and the 1 who eats salmon isn't technically a vegetarian as fish are animals.
Fresh vegetable soup.The cheats version which is small cubes of potato, onion and 1 other vegetable you want. Rosemary, vegetable stock cube and a little salt. Or Small cubes of squash, and courgette,tinned kidney beans, cannoli beans and haricot beans. Rosemary and veg stock cube and salt. They are both quick and take about 20 Min's to make.
The friend thats eats Salmon is not a vegetarian..vegetarians do not eat any flesh.
How about pasta salad?
how about a nice bit of fillet steak?

Try a 25 watt bulb on a bed of crispy lettuce!
Spinach Pie is a great one to serve as my veggie friend loves it. Pie crust is puff pastry and filling is a mixture of leeks, red onion, shallots braised; add frozen spinach & cook until moisture has evaporated, add crumbled feta, dill, grated nutmeg, S & P, cream & 1 egg lightly beaten. Pour mixture into into prepared puff pastry dish and cook at 180C for 30-40 minutes. You could also add some pinenuts for extra crunch. Bon Appetite!
