First thing you can do is find out all the foods you may eat now that include animal byproducts. Most all breads use 'dough conditioners' that typically aren't vegan. mono and diglycerides, sodium stearoyl lactylate, and datem are just one example.

A lot of foods that include 'natural flavors' become grey areas because you can't know without further research what those include.

Even most cheeses use rennet, which is a byproduct of animals...which most vegetarians still eat unaware it doesn't agree with the ethics behind even vegetarian lifestyle (as an example.)

Breakfast - Oatmeal, pancakes, granola, tofu scrambles, gimme lean brand sausage is awesome if your ok with using substitutes. Vegan cereals. Soy yogurts. Protein shakes.

Lunch - Sandwhiches/pitas of any vegan combo. Cold salads ..vegan mayo, vegan butter, olive oil options. Can do vegan soydogs if you'd like. There are a few vegan cheeses available that melt well, just have to look out for any that have caseinate, casein..ect, as it is a milk protein thats added to substitute cheeses and deems them not vegan.

Dinner- Spahghetti, tacos with soy crumbles, gardenburgers, many ethnic dishes from mexico, spain, italy and indian foods especially can be made vegan if they aren't already.

snacks- hummus, dates and cashew mix...dolmas, many potato chips are vegan. raw jicama fries, roasted eggplant.

These are just a few things my gf and I eat lately and we go thru phases of different cultural foods. Many options available, look into raw food diets too for some not so common ideas.

personal experience and research.

There is so many tips to give. If you've already been a vegetarian, than it's already an advantage for you!
Breakfast: Fresh fruits, freshly squeezed juices, I buy vegan waffles sometimes!
Lunch/ Dinner: Boca Burgers, salads, pastas, stir-fry.
MY LORD, there are so many different versions. Just picture what you would normally eat, and eliminate the dairy from it. They have plenty of substitutes for dairy as well!
Good luck!
