What are som easy to make vegetarian meals??

Anyone know of any vegetarin meals that are yummy to make and that don't take that long to make.

Here's my favorite:
Black Bean Burritos
Makes 4 burritos

1 15-ounce can black beans, drained
1/4 cup salsa
1 cup cooked brown rice
4 flour tortillas
1 cup shredded leaf lettuce or spinach
1 tomato, diced
Combine the black beans, salsa, and rice in a saucepan and simmer gently for 3 minutes, stirring occasionally. Remove from heat, cover, and let sit for 5 minutes.

In an ungreased skillet, heat a tortilla until warm and soft, then spread a line of the bean mixture down the center. Top with lettuce, tomato, and more salsa, if desired. Roll the tortilla around the filling, then repeat with the remaining tortillas.

Veggie stir fry with some soy sauce and rice...or they have the Boca Burgers.....veggie omeletes.....tofu can be good if you marinate it then stir fry it....anything with fruits for dessert

This is great for a summer time lunch or dinner. Pasta Salad8 0z. penne pasta,3 cups broccoli flowerets,sliced carrots and cherry tomato halves-- 1 cup of mozzarella cheese balls-- 1cup Italian salad dressing 1/2 cup chopped red onion 2tbsp. McCormick salad supreme Seasoning ( If I don't have, I use my spices) Cook pasta as directed on package,Place pasta in large bowl. Add remaining ingredients;toss gently. Cover., refrigerate until ready to eat. You'll love it. sometimes I add cauliflower and or cucumber.

Brussels Sprout Salad
Cooked Brussels sprouts
Pecans, whole or chopped (I like whole)
A little olive oil
A little balsamic vinegar
Tiny sprinkle of Splenda
Salt/pepper to taste (not too much)
--You can buy frozen Brussels sprouts that steam in the bag in the microwave, it only takes 5 minutes.


Simple & Healthy Pasta Salad
Cooked whole wheat fusili
Viniagrette
Halved cherry tomatoes
Shredded parmesan
Sliced olives


Cucumber & Tomato Salad
Sliced cucumbers and tomatoes
Olive oil
White vinegar to taste
Splenda, salt, and pepper to taste
Let it drain before serving
