Not sure where you got that information, but that assertion is wrong. Grilling cheese does not make it less or more healthier than non-grilled cheese.
I've never heard that before. I love cheese. I'm interested in finding out if someone knows this answer. If there is a healthier way to eat cheese I'm all for it.

It isn't as far as I know it just gets melted and lovely and gooey.
just guessing...but...you know how when you make a grilled cheese it releases some oil??? perhaps that's fat in the cheese that is getting left in your plate instead of going into your body...that's the only thing I can think of...grilling must just reduce the fat a little bit...
