Hummus if good and comes in many varieties. It is good in a wrap, as a dip for veggies and chips and is a good source of protien. It can be made with chickpeas or black beans.
Beans are good protien sources when matched to whole grains - like brown rice. Red or Black beans, brown rice and a can of tomatoes - add a little chili seasoning and cumin for a quick meal.
There's so many good pasta dishes, etc. The website below is a pretty good resource. It sounds like you eat fish though, so you should be able to make a ton of stuff.
One of my favorite things is mini-portabella mushroom pizzas (healthy too). Instead of bread, I use a portabella mushroom, top it w/ stewed Italian tomatoes (from a can - I'm lazy), then mozzarella cheese, and whatever you want as toppings. Get a pan spray w/ Pam or whatever and put them in the oven for 15-20 minutes @ 350 degrees (I also drizzle them with a little olive oil before baking them too).
If you eat shrimp, I love this recipe, and it's super easy (I usually make it w/ brown rice - but it's pretty good over pasta too). I've tweeked my version, the the original is good enough:
2 tsp. olive oil
4 garlic cloves, minced
1-1/4 lbs. canned whole tomatoes, drained and coarsely chopped
1/3 cup fresh parsley, chopped, divided
13 ounces large shrimp, peeled and deveined
3 ounces feta cheese, crumbled
1 Tbs. plus 1 tsp. fresh lemon juice
1/8 tsp. freshly ground black pepper
Preheat oven to 400°F. Heat oil in a heavy nonstick skillet over medium heat. Sauté garlic 30 seconds. Stir in tomatoes and 2 Tbs. plus 2 tsp. parsley and simmer 10 minutes. Stir in shrimp and cook 3 minutes. Transfer to an oiled baking dish and sprinkle with cheese. Bake 8-10 minutes, until shrimp is just cooked throughout. Sprinkle with lemon juice, remaining parsley and pepper to taste. Serve immediately.
I should not come to the food room when I'm hungry...
I am a new veggie myself and one site that I absolutely adore is: www.vegweb.com and a real easy transition cookbook is Kids Can Cook Vegetarian. I actually bought this book to use with my kids but adults who want quick and easy recipes would enjoy it too!
Just google vegetarian recipes and you will be blown away with all of your options. Amazon.com also has a great assortment of cookbooks.
