Vegan breakfast?

I'm on a diet that has some vegetable days (no cereal, bread, starch, high protein, sugars, etc). I'm good for the fruit days, but what would be good for breakfast on the vegetable days (remember...no cereal, bread, starch, high protein, sugars, etc)?

try this dish i had for breakfast once at a vegetarian cafe:

stir fry, grill, or steam some mixed fresh vegetables of your choice in a little olive oil (which ever way you prefer your veggies cooked) and then add seasonings and herbs, and then stuff them then into hollowed out cooked bell peppers or in big fresh romaine lettuce leaves as a wrap. you could also add a fresh pico de giao, salsa, a light vinegarette, soy sauce, or olive oil as a side garnish (that's what they had at the cafe).

it was pretty yummy!

You could do a veggie scramble with broccoli, peppers, onion, garlic, carrots, mushrooms, zucchini, and a bit of tomato. Just stir fry it in olive oil and season it with your favorite herbs and Tabasco if you like it. If beans are okay, add some chickpeas and mash them up just a bit. Nutritional yeast is a tasty topping if that's allowed. You can eat this on it's own or wrapped in large lettuce leaves as a wrap.

If you want something kind of sweet, cook up some yellow squash and/or carrots, mash them up and add cinnamon, vanilla, and artificial sweetner.

For something savory, get some nice vegetables that you would normally use as an omelette filling (mushrooms, onions, peppers, tomatoes), and saute them like you would for an omelette and serve them with topped with herbs.
