Well, there are vegetarian cheeses, like Beebs said. If you're trying to go vegan though and give it up, here's my advice.
I, too, once thought I could not give up cheese. And I'm allergic to dairy! But finally, one day, I decided it was time. I completely cut all dairy out of my diet. I concentrated on foods that didn't use dairy substitutes, cause at the time, I didn't have a taste for soy milk. Stuff like pasta with tomato sauce and veggies, veggie fajitas, stir fries, etc. During this whole time, I worked at a pizza place. After about 6 weeks of no dairy, I broke. If anyone knows the Cheese Sticks at Papa John's that's what did it. I had to make them, cut them, deliver them, etc. Finally, I couldn't take it anymore, and I took a bite. I just needed their cheesy, garlicky goodness. Or so I thought. After 6 weeks of no dairy...they tasted....DISGUSTING! Like sour, rancid, ewwiness.
I have never eaten dairy willingly again, and anytime that I have accidentally taken a bite of something containing it, I know instantly by that foul, sour DAIRY taste. I've talked to other people and I'm not the only one who has lost their taste for dairy in this way, although some people don't.
So maybe if you just try it, you'll find you don't need it anymore. After a while, I noticed that I liked the taste of dairy substitutes like soy milk and vegan cheese. I just don't recommend that a dairy lover to go straight to the substitutes cause they don't taste the same. But like how dairy was once normal to me, the soy taste some people complain about has become my norm. I also found that when I was first transitioning, I preferred rice milk and almond milk to soy, although I prefer soy now.
Try this website for dairy-free recipes. There's lots of options for pizza without cheese that you might like. I've worked in quite a few pizza places, and people order pizza without cheese all the time. The second site is of someone who also has a "cheese monkey" like yourself, and marks the cheesy recipes with a *. Good luck. :-)

Many vegetarians eat cheese. Cabot brand makes a terrific line of cheese made with vegetarian rennet, and there milk comes from well cared for cows. Vegans dont eat cheese, but most veggies do. I make cheese/green pepper/onion pizza for my 12 year old veggie daughter-one in the oven right now, as a matter of fact!
cheese and other dairy products are eaten by vegetarians, vegans do not eat any animal byproduct. the only thing you really cant eat is meat and things with meat in them
I have always known that being a vegetarian meant "no meat" it doesn't mean no pasta dairy products
well you are trying to resist 12 million years of hominid evolution.
you don't have to give up cheese unless you want to be a vegan. Vegans don't eat any animals products at all. vegetarians simply don't eat flesh (chicken, seafood, beef, pork, etc.) but you can eat eggs, cheese and all that. I have been a vegetarian for almost a year and I love it. I mostly eat mexican food like bean tostadas, avocado tacos, cheese enchiladas. I also eat veggie burgers, hot dogs, lasagna, chik'n nuggets, riblets, "ham" sandwiches and of course fruits and veggies. Most vegetarian foods are version of normal foods. Check out your local grocery store, they have veggie sloppy joe, taco meat and pizza.
Vegetarians don't eat animals. Vegans don't eat any animal products. So, as just a vegetarian, you can eat dairy. As a vegan, try checking out some vegan websites and visit your local vegan store.
You can eat cheese being a vegetarian. Lacto-Vegetarians eat dairy, Ovo-Vegetarians eat eggs, and Lacto-Ovo Vegetarians eat dairy and eggs.
If you want to give up the cheese, just order your pizza without it. I thought I would get funny looks the first time I ordered a veggie supreme pizza without cheese, but they didn't even bat an eye. I realized that I didn't even miss the cheese after the first few bites. If you get some pasta with marinara, just leave off the cheese topping. It is not as hard as you think, if you just ask for it to be left off.
I make the most awesome vegan pizzas ever. Have you heard of Toffutti brand soy cheese? It is, in my opinion and experience, the best soy cheese out there. (Veggie cheese is not really veggie as it has casein in it, which is a milk protein). I homemake the dough (although you can just get some pre-made dough or pizza crust) and then add a layer of olive oil, garlic and herbs. Then over that, I put a maranara sauce. Over that I will put some Yves pepperoni slices, and on top of that I put toffutti soy cheese slices over that (that I pre-minced, so it looks like the cheese that comes in the packages at the store, for pizzas). Over the soy cheese, I will put sliced mushrooms, diced bell peppers, and any other seasonings I feel like adding. It makes a great pizza! Also, I've tried it without the cheese and it still tastes sensational. You really won't miss the cheese (at least not too much). It's really the rest of the ingredients that makes a good pizza.. Unless you just like 'cheese pizza'.
I used to think it would be hard to give up cheese, but it's really not. I don't even miss it.
As far as cheese goes you just have to be sure that it does not contail animal derived rennet. There are plenty of vegetarian cheeses out there. As for pizza I LOVE pizza, I thought the pizza place would think I was strange for ordering without cheese(just pasta sauce and veggies, but they didn't care) Sometimes I add the vegetarian cheese when I get it home and just pop it into the oven for 10 min to melt it.
Why do you have to do it their way? If you like it eat it.
vegetarians drink milk, unless your lacto-vegetarian, or a vegan
