Well I went from Omnivor to Vegetarian to Vegan within 2 months.
And when I went Vegetarian I just limited myself to one meat product a day for 1 week or two, and then I started to eat Veggie And Vegan burgersm Links, Hot Dogs, ETC., ETC., which in my opinion taste even better than the real stuff.
Stop eating meat.
to get started, just quit eating red meat.
Start eating more veggies.. stop eating meat.

Many of my friends have gone vegetarian and for medical reasons were forced to go back to eating meat. Others have done fine. The biggest challenge is to get lots of protein in your diet, like beans and nuts.
Before quiting on meat cold turkey, I would eat soy meat, cheeses, breads, fruits, and steamed vegetables. If you feel you have to eat meat, eat the ugly stuff, like fish and lobster..ukk

That depends on what sort of vegetarian you decide to become.
There are "non meat eaters", they eat fish (which is flesh, not meat), eggs and dairy.
There are "lacto-ovo" vegetarians, they eat eggs and dairy.
Then, there are vegans, that eat no animal product of any kind. (It's really hard to do, and takes quite a lot of work.)
Decide which diet seems better for you.
If you eat seafood, then you're still getting plenty of protein and you don't have to rely so much on soy products. (soy contains a form of estrogen, which can throw off your system if you eat a lot of it and aren't monitored by a doctor.)
