Very good question.
Actually, it has to do with becoming healthy as opposed to unhealthy [just to clarify that vegan does not necessarily = healthy] as there are many healthy non-vegans out there.
My personal experience = I was born with blue eyes. I'm told that most babies are born with blue eyes, then the colour changes. By the time I was in grade 3, my eyes were a very dark brown, and I'd always known them to be brown.
I started to get interested in health and eventually went the vegan route. I didn't notice a colour difference, but when I moved out of my parents home (where the vegan choices were limited to the more unhealthy types -- mostly highly processed foods etc.) and started a garden and eating lots of vegetables, and focusing on simple meals and mostly rice instead of mostly pasta etc. my eyes became green!! They look hazel (brown/green) at a glance, but looking closely with a light shining on my eyes they are definitely bright green.
So, it's true. My wife spent some time on Gabriola island and there people lead a pretty relaxed lifestyle, are pretty healthy, most have gardens and orchards, many are vegetarian or vegan, and of course get lots of fresh ocean air... she said the people all have very bright vibrant eyes -- just gleaming. Young and old. So, health is really a generalization as it includes, such things as air, water, stress, food, exercise, etc. not just one's diet, and it does seem to alter the colour and vibrancy of one's eyes -- the windows to the soul.

Its true and the reason is because you are craving a large steak. Bloodier the better. Vegan's are crazy. Our bodies are made to eat meat. Are teeth are made to eat meat. Eating only veggies is not good for you. Believe it or not fat is good for your body, you just can't over do it. You run the risk of certain cancers if you dont eat meat, however you could always eat a stick of butter from time to time.
