Eat it and take your allergy meds. You will outgrow the allergy this way.

If you are allergic to cheese-omit it from your diet-I like milk but it doesn't agree with me so I avoid milk-if I drink milk I suffer and I do not want to suffer.

You may be allergic to cows milk. Why not try cheeses made from goats milk or even sheeps milk?
There's also tofu, a bit like cheese, made from soya beans.

Try cheese made from raw milk and vegetarian rennet. I am highly allergic to commercial milk because it contains steroids, growth hormones, antibiotics and other synthetic things. I do just fine on raw milk, butter, and cheese. Check to see if you have a local food co op or dairy that offers raw milk products. I make my own homemade cheeses with vegetarian rennet, and have no effects from it.

You are probably allergic to some of the additives or chemicals used in cheese. If you are not allergic to milk protein you can try paneer, a curdled milk protein used by Indians. It is easy to prepare so you can avoid unnecessary chemicals. Boil 1 litre full cream milk. While boiling, turn fire low and add 4 tablespoons lime juice (preferred) or vinegar. Stir till you see the milk has formed clumps. Switch off fire and let rest for 20 mins. Pour into a muslin bag. The fluid that comes out is whey - it can be drunk and is good for cleansing the bowels. Tie the bag and put a weight over it to drain all the water out - leave for 6-8 hrs. The paneer is ready and can be frozen. It doesn't have the strong taste of cheese because it is not fermented. Enjoy!

If you're allergic to the milk protein casein then you might have a hard time finding a cheese substitute because most of the them have casein in them and taste reeeaaallly gross. Most substitute cheese is made out of rice or soy. I've tried them because I've recently stopped eating dairy and miss cheese. Galaxy Nutritional Foods makes a vegan Parmesan flavor cheese topping that tastes okay. My favorite is Eat in the Raw parma! vegan Parmesan topping, it's made out of walnuts and tastes good. Both you can find at health food store.

If you still want the taste but not the health problems associated with eating cheese and other dairy products then you can make vegan cheese.

There are many recipes out there.. just put 'vegan cheese recipe' into a search engine and see what comes up.

If you would like to read or buy a book that has many 'uncheese' recipes in then I would recommend buying the Ultimate Uncheese Cookbook by Jo Stepaniak (link to Amazon for info below).

I use this book all the time to make various cheeses and cheese related recipes (I am vegan so do not eat any dairy).
