Good vegetarian recipes?
i have a limited supply of vegetarian recipes. my husband is quite the opposite of vegetarian, so i am limited in what i make for myself. i need new recipes! if anyone has any good recipes let me know!

They have also got alot of great other informative free ebooks too.
buy one of those vegetable lasagnas or make one yourself (any old recipe you find online). i had some of one tonight and it was really good
VEGETABLE PAELLA
50ml each sunflower and olive oil
2 large leeks, sliced
1 onion, chopped
3 cloves garlic, crushed
1 green pepper, seeded and diced
375ml brown rice
250g mushrooms, wiped and sliced
2 brinjals, degorged and diced
5 ml each turmeric, dried origanum and dried basil
400g tomatoes, skinned and chopped
500ml choppe green beans or 500ml peas
100ml chopped parsley
sea salt and milled black pepper to taste
a pinch of sugar
500ml vegetable of Marmite stock
125ml white wine
250g feta cheese, diced
Using a large saucepan, heat oils and add leeks, onion, garlic and green pepper.
When softened, add rice and toss until coated with oil.
Reduce heat and add mushrooms, brinjals, turmeric and herbs.
Toss for a minute or two, then add tomatoes (or can of tomatoes, plus juice), beans or peas, parsley, seasoning, sugar, stock and wine.
Mix well, then turn into large 30cm x 26cm baking dish.
Cover and bake at 180 degrees celsius for 35 minutes.
Stir lightly with a fork, then continue baking for another 25 minutes until vegetables are cooked and the liquid absorbed.
The mixture should be moist but not at all watery.
Turn off oven heat and cover top with diced feta and return for 10 minutes to heat through.
