You people have it all wrong!

First off, if you start with high quality vegetarian meat, like the kind you get a Whole Foods, there is no need to cook it.

The best way to prepare a vegetarian is raw, like sushi. Do you like fish sushi? Of course you do. Make sushi using vegetarian meat, rice and some decent nori (Japanese seaweed) which you can get at any good Japanese grocery. Don't forget soy sauce and wasabi, if that is your preference.

Different cuts have different flavors. My favorite is the cheek, but cheek is very expensive, so I usually eat arm which is not quite as good, but is more affordable.

Roasted over a spit ala the Salem Witch trials.

Eating a vegatarian isn't very vegetarian...

Use vegetable broth. It can be found along with beef and chicken broth at most grocery stores.

Why are you cooking a vegetarian in the first place. don't you like them? No seriously If you need stock, substitute Knorr Vegetable stock mix

I have experimented with this question over the years and have a couple of favorite things to give a little more flavor. I like to brown the onions first and make a crude roux with some kind of oil and flour added to the browned onions,all of which I try to brown even more without burning. I also like to use bell peppers for flavor and also fennel. You can also buy vegetable soup base but most bases tend to be salty. I don't use salt in my home cooking. You might also try making a nice stock out of various vegetables and then simmer it for a long time until it has reduced quite a bit. Then strain it and cook your vegetables in this.

boil and strain veggies such as carrots and beans (green ones**green beans)
or i am sure that theres got to be some type of veggie broth!!
