It's not supposed to! Just keep in mind that quite a few companies will add jelling agents to their tofu!!
They do it because it's cheap and conceals 'mistakes' (often made on purpose). Adding gelatin, agar, etc saves them money by using less heat, less nigari, less beans in producing their product. It also means the final 'tofu' will hold up better in shipping and on the store shelves.
This ISN'T an extremely common practice, but I have over the years seen quite a few companies that do this, mostly in the southern US.
Like everything else you HAVE to check the ingredient panel!

no it does not, thank God cause if your a vegitarian you would not want gelitan becasue it has some type of animal thing in it. Same as lucky charms, marshmellow's and alot of other sugar candies
No. You wouldn't see as many vegetarians eating it, if it had gelatin in it.
