How To Turn Vegan Cream Cheese Into A Smooth Consistency?
We went strawberry picking this morning and I plan on making this strawberry tart thing tomorrow. For the creamy topping Iwant to use Cream Cheese, as that's what I have and don't feel like buying a vegan whipped cream. After softening it to room temperature, what should I add? I just ran out of soy milk this morning and will be leaving for a week on Thursday so I'm not going to buy more. Would coconut milk work? Lemon Juice (maybe add a little bitterness)? I'm out of ideas! Thank you!!

If your using tofutti's cream cheese (the only one ive found in stores) you can make a nice cheesecake like dip if you mix it with powdered sugar, a little bit of granulated sugar, and some vanilla. Whipped cream stays fluffy cause your beating up the fats in it so much.. haven't tried this extreme with vegan cream cheese but if you wan't to give it a shot mix in 3 parts cream cheese to 1 part vanilla soy (i prefer 8th continental) and chill it..and the bowl your going to use. Then use a beater on medium speed and see if you can get it to poof up and peak.
I'll try this sometime if you don't end up doing it, never crossed my mind too :) hehe.. sounds good though. Maybe add a little bit of soy vegetable oil or another nearly flavorless oil to add some strength to it, not sure if this would effect the flavor though..start in small quantities if you do. Or if anyone else has any additional ideas haha..this is all on the spot!
add some whole milk and animal fat.
Try some warmed water, not boiling. Just a teaspoon or two. Stir it to smooth it out. Be sure the cheese is at room temp. before doing this!
don't add just liquid to create smoothness I recommend put the cheese in a small sauce pan heat it up a bit and add corn starch just a 1/2 tspn and maybe a few tbsp of milk if you want, and don't worry it will set once it cools
