Hi,

I found one recipe in my stash and another for you online. The flax bread originally had eggs, but when I found it on a gluten free forum, 2 users veganized it and said it turned out "delicious". Hope it works for you.

Garbanzo Bean Bread

1/4 cup garbanzo flour (middle eastern or Indian grocery, or www.bobsredmill.com)
1/3 cup room temperature water

Whisk flour and water together and let stand 15 minutes or so. Batter will be thin.

Preheat an 8 inch skillet on medium high heat until drops of water sizzle on it. Spray with oil, or add a dab of olive oil. Pour in the batter and tilt to cover the pan completely. Cover and cook two minutes. Take off cover and spray top with olive oil. Cook uncovered for another 5 minutes. Edges will get dry. Flip over and lower heat to cook five more minutes.

Comments: Once it's done, you can use it right away or cool it and use it later.

Gluten-Free Flax Bread

my own recipe, comes out fluffy and nice and need not be frozen. healthy and full of nutrition, as opposed to rice flour based breads. can be vegan*

12-18 servings 1 loaf 2? hours 2 hours prep

1 1/4 cups gluten-free flour
1/4 cup garfava flour (garbanzo/fava bean)
1/2 cup potato starch
1/4 cup cornstarch
1/4 cup flax seed meal
2 1/2 teaspoons xanthan gum
2 teaspoons active dry yeast
1 teaspoon salt
Ener-G Egg replacer equal to 3 eggs
1 cup water or nut, rice or soy milk
2 tablespoons vegetable oil
2 tablespoons agave nectar or vegan sugar
2 teaspoons vinegar

Combine flours, flax, starches, gum, yeast, salt.
In the mixer, combine wet ingredients, then add the dry.
Scrape the sides, and mix on medium for 4-5 minutes.
Pour into 9x5 loaf pan, and let rise to top of pan (took about 80 minutes). I always, always let it rise in a turned off oven.

Bake at 350F for about 40 minutes.
Remove from pan, cool, and slice.

*use egg replacer of choice to create a vegan loaf, as well as an alternative sweetener for the honey

you can buy stuff to make your own from rice flour or other flours...try the organic foods or diabetic food sections.

Yes, there is ... I know you can find it at Rainbow grocer in San Francisco.... If you can find it here you should be able to find it else where....
