Vegan Banana Cake Please?
Does anyone have a good vegan banana cake recipe?
Answers:
i usually buy the ready made mix banana muffin or bread mix, and instead of using the indicated ingredients, i use
2 bananas (puree)
1/4 cupe of applesauce (substitutes 1 egg)
1/2-1 c soy, rice, or almond milk
just adjust the liquids to the consistency u want for the cake, then i just put nuts or raisins, or w/e u feel like putting..
sometimes i put glaze on mine ^_^
glaze w/o sugar..
1/4c orange juice
2 T maple syrup
some jams or jelly (no gelatin)
1tsp molasses
coconut flakes, (u decide how much)
1/2-1 PIECE banana, (mashed or puree)
boil the orange juice first, then mix the other ingredients, i cook them for about 10 mins, until it becomes sticky,
then i pour them on the cake while they're still hot, let them cool..

Banana Cake

Ingredients:
* 6 ripe bananas
* 1/2 cup melted vegan margarine
* 1/2 cup all natural sugar
* 1 1/2 to 2 cups unbleached flour
* 1 tsp vanilla
* dash of cinammon (to taste)
* dash of nutmeg (to taste)
***If you like a strong cinnamon/nutmeg flavor, add more.
Directions:
Peel and mash all bananas. Add melted margarine and mix thoroughly. Add all ingredients except 2 tablespoons of the sugar and all the flour. Once well incorporated, add flour, 1/2 cup at a time until batter reaches a paste like consistency. Pour into a lightly oiled 13x9 inch pan and sprinkle with remaining sugar. Bake at 350 degrees for 45-60 minutes or until top is golden brown and cake is cooked all the way through.
Comments: Depending on humidity/altitude, you may need more or less flour, which is why it's good to only add 1/2 cup at a time. The 1 1/2 to 2 cups I listed above are just a rough estimate for the climate where I am.

Vegan Banana-Chocolate Chip Cake [8 servings]
2/3 cup maple syrup or honey
1/2 cup vegetable oil
2 tablespoons egg substitute
1 tablespoon soy lecithin (optional)
3 ripe bananas, mashed
2 cups whole wheat pastry flour
1 teaspoon baking soda
1 pinch salt
1/2 cup semisweet vegan chocolate chips
Preheat the over to 350. Cream together the syrup, oil, and egg replacer. Add lecithin and bananas.
Combine flour, baking soda, and salt. Add carob or chocolate chips, then fold dry ingredients into creamed mixture, stirring just to moisten and combine. Don't overmix.
Pour batter into an ungreased 8-inch cake or Bundt pan. Bake approximately 40 minutes, or until cake tests done with a wooden toothpick. Cool on wire rack.
